Seriously. . . .

We have been planning on making shredded pork tacos and having margaritas for over a week. Our oven has been broken for over a month and we finally get it fixed and our Pyrex shatters in the oven. Now I have an oven full of shattered glass. OMG. I have never had a Pyrex dish shatter before and I will never be putting it in my oven again. We have never made margaritas at home before and we were possibly going to be having a few friends over later. It was going to be a fun Mexican food kind of night. Now I'm sad. . .

Any suggestions of what I could quickly throw onto some corn tortillas quickly for dinner?

  • That sucks... Do you have any canned chicken or ground beef that you can season to taste like tacos?

  • I would make some meat or vegetables in a hot saute pan, fajita-style. Ugh, I've never heard of Pyrex breaking in the oven! It's supposed to be oven-safe!

  • I know! I never thought twice about handing it to Fiance to use in the oven. We will probably be running to the store once Fiance gets back from disc golfing to grab a few things. So disappointing. It sucks because we have already made three trips for these stupid tacos to get all of the ingredients. We went to two different grocery stores and a Mexican market to grab everything we needed.

  • Not to mention it is hard to think of anything basic for Fiance to make. He is so picky about everything as he is also a chef. He went to culinary school in California. So I will see if I can convince him to grab some chicken or steak strips or something from the store. We could throw in some onion, cilantro, and some tomato's and call it a day if he will have it.

  • I love taking a flank steak and seasoning it with chili powder, cumin, coffee (only about a teaspoon), salt, pepper, garlic and onion powder.

     

    Bake 350 for 30 min* or until cooked how you like it. Slice on the diagonal and then put into tortillas. Top with pickled onion (if you can find it), cilantro, and I like to make a blend of diced cucumber, jalepeno, and lime juice to top it with.

     

    *I just realized your oven is not usable right now. You could probably sautee it until however you like your steaks.

    If you have Trader Joes near you - go grab the Carne Asada! It's premarinated skirt steak. I got it for the first time the other day and cooked it on a grilling pan out on our gas grill when some friends came over. Everyone LOVED it! Edited to second the idea of extra strong margaritas!

    Haha . . . I will have to actually try this sometime after we clean the oven up. I may or may not have this cleaned up by the end of the day.

     *Also, my poor cat is incredibly terrified of the smoke alarm and she will now likely be under the couch or run into my closet and stay there for the next 24 hours. We accidentally tested the smoke alarm last week when we replaced the battery and we could not even get her out of the closet to eat. Now if the battery is running low and it just periodically beeps, she freaks out. She has never had an accident ever and she is over three years old, but she managed to pee in my closet twice. Poor thing.

  • Run to the store and grab a whole roasted chicken.  Shred it up, minus the skin.  If you want, you can warm it on the range top with some taco seasoning, and throw it in your tortillas.  Voila!

  • Pyrex cannot go into a hot oven while it is cold. That was probably why it shattered. I prefer using corningware for that reason. It takes alot of abuse in order to get it to shatter that way. It can go from freezer to oven. And some corningware, depending on the bottom, can also be placed on the stovetop to cook things. It makes gravy very easy after roasting the meat in the oven. Sorry your evening has become extra hurried! I hate when you plan things for so long and then something messes up the plans!

    As an aside, Pyrex changed the type of glass it uses in the 80s or 90s, and it's no longer as shatterproof as it once was. One unintended consequence is that it's more difficult to use Pyrex to make meth. This, in turn, leads to more equipment theft from laboratories.

  • This is the first Margarita I have ever made. I am pretty proud as I even made exactly one glass worth since I am still waiting on Fiance to get home. I only used one shot since it is just now 5pm and I still have a long night ahead of me ... Lol

  • If you get in touch with pyrex im pretty sure they will repalce it for you. Its supposed to be guaranteed.

    The other important factors..

    1) Glass baking dishes should not be placed in the oven at temps over 425 - so no broiling.
    2) Avoid adding cool/cold liquids directly to a hot pan.
    3) Avoid sudden temperature changes ie directly from freezer to oven or from oven to fridge/freezer.  This includes making sure to preheat your oven before placing the pan in the oven as often times during the preheat cycle the oven will heat up to a temp much higher than your desired cooking temp to get the oven to the correct temp quickly then levels off.
    4) When removing pan from oven you should not place it directly on a cold surface like a marble counter top....instead use a cork trivet or potholder to insulate the bottom of the pan and slow cooling.

  • Also, be careful about setting a pyrex on top of the stove, and don't do it if you've been using any of the burners. The uneven heat from a cooling burner, even if the pyrex pan is not on top of that burner but just next to it, can cause it to shatter. I speak from experience and a ruined Easter dinner :(
  • So we ended up grabbing a rotisserie chicken and some chipotle taco sauce. It was so easy and took about ten minutes. It is definitely now a staple for quick affordable meals.
