Food Tasting at Venue

So we have our 1st food tasting this weekend at Mayfair Farms.  I wanted to know is there anything we should bring up with the venue at this time.  I plan on taking photos of all the rooms and details so I can start gettign my decorations and details.  But I just don't want to miss any thing I shoudl talk about during this time.

    Here's a few I can think of:

    Is this exactly what will be served the day of?
    Is there bar service during dinner?
    Are there substitutions allowed (for food allergies)?

    Ask specifics regarding their serving style of Hors d'oeuvres, appetizers and main meal.
