Winner, winner, buffalo chicken lasagna dinner

SO GOOD. 
I would post the link from Pinterest but my second time making this tonight, I made changes and it came out so much better, so I don't want to give ya'll the crappy version. 

Boil lasagna noodles. 

In a large skillet, brown a half an onion (minced up in food processor) with 2 tbs butter and 2 tbs olive oil. I also added 2 tbs minced garlic. Once onion is cooked, add 1 8oz block of cream cheese and stir around until it melts on medium heat. Add 1 full bottle Frank's Red hot. 

3 boneless skinless chicken breasts- bake at 425 for 25 minutes. Shred. (I did this the night before which made it much quicker). Tonight I put it in the food processor to grind up a little and it was much better than the time I left it shredded chunks. Add chicken to skillet and mix around so chicken gets covered in sauce. 

Spray a rectangle casserole dish with cooking spray so it doesn't stick. Layer bottom with noodles (mine fit exactly 3 noodles lengthwise). Spread out half the chicken mixture on top. Drizzle some ranch dressing on it. Another layer of noodles. Rest of chicken mixture. Drizzle some ranch and shredded mozzarella cheese. Top layer of noodles, and cover with shredded mozzarella cheese. Bake uncovered at 350 for 25 minutes. 

Also, I'm stoked to make THIS recipe tomorrow night, I have not tried it yet but it looks good!

    I don't like onions either! I don't eat them on burgers or onion rings or anything, but I like the tiny kick they give when all minced up. You can def skip them though! And I'm so excited to have 4 tupperwares worth for lunches :)

  • Instead of white onions, you could maybe try leeks, red onion, celery, or garlic!

    Or, you know, all of the above.
  • Red onion is just as bad as white onion. And yellow onion, and green onion. They can all die in a fire.

    Once they're sufficiently killed in that fire I can moderately tolerate them, but it has to be a BIG FIRE. Blech.

  • So much onion hate!  I'm not a big fan of red onions, but grilled onions are delicious every time.

  • I am all up in anything that uses buffalo sauce.  A friend of mine used to bring it to school, keep it in the communal fridge, and if I had a bad day, she would hold the magical-smelling bottle under my nose.  Perked me right up.  True story.

  • I keep seeing this buffalo chicken lasagna phenomenon on social media, but it doesn't sound good to me. I love lasagna and I love buffalo chicken-type things, but the combo just doesn't sound amazing.

  • I hate onions too, but my FI is a kickass cook and has found the only way I'll eat them. He makes carnita tacos with this spicy green sauce and PICKLED RED ONION. It sounds disgusting and I may have gagged the first time he mentioned them, but hear me out. You slice the red onion and put it in a bowl with some salt and lime juice. Let it sit for a while and stir occasionally, the onions break down a bit and they make a delicious topping for the tacos. Basically all you taste is the lime juice with a little crunch. Just sayin'

    You're wrong- it IS amazing lol.

     But I get where you're coming from....I personally think it's weird and gross to put another "meal" on a pizza. When people get buffalo chicken pizza or taco pizza I'm like no- pizza is the meal, I want to taste pizza, why would I put a completely different meal on my pizza?!

  • Buffalo anything all the way. I make a mean buffalo chicken dip, but because it has about a bazillion calories I only make it for special occasions.

    So, what I'm saying is, if any of y'all want to have a party, I can provide dip.

  • BUFFALO FOR THE WIN. Almost once a week we have buffalo chicken stuffed sweet potatoes, topped with some blue cheese dressing. Sounds odd but it is the bomb. 

    This recipe looks amazing and I need to make it. Thanks for the inspriation!

  • I have a Taste of Home recipe for buffalo chicken lasagna with blue cheese crumbles that I make ALL THE TIME. We love it to death.

  • I'm in the keep-your-buffalo-outta-my-lasagne boat. I really like buffalo chicken, and I really like lasagne, but I don't think I'd like them together. Textures are too different.

    FI made steaks a couple weeks ago, and he put some onions in some beer and then grilled them. I don't like onions except on hamburgers (only a little) or chili, and I straight up ate these off the plate when he brought them in. I love it when he cooks.
