What's for dinner?

I'm hungry but I still have a couple of hours until lunch. So what do I do about it? Start a food thread!

 

Any good food plans this week?

 

Tonight I am making Spanish rice and roasting some Chorizo to go along with it. I think I'll whip up a batch of Margaritas and maybe grab some chips and guac on the way home.

 

Tomorrow I have no freaking idea. I have some pork chops in the freezer. Maybe parmesan crusted pork chops? Any suggestions?

 

Thursday my bff is coming over for a movie night, so I will make us some salmon because it is her favorite. I like to do a herb crusted salmon and then roast it. Serve with some roasted cauliflower. Yum!

 

Friday another one of my friends is meeting me at my office so we can go to happy hour, so I won't cook that night.

 

Ok, go!

    I have no big dinner plans this week, but Friday is our office holiday party and I plan to bring deviled eggs. I love deviled eggs, so I'm going to need to work extra hard to make sure they actually make it to the party.

    ETA: I made pecan crusted pork chops the other week and it was amazing. I like pecan crusted anything, so if you do too it's a good option.

  • Our fridge is currently stuffed with leftovers and it is beyond gross weather out.  I plan on a have whatever you want dinner tonight.  I've got my eye on some herb roasted potatoes that i'll smash and fry in a pan with eggs and maybe some brussels sprouts. DH will likely have some of the potato leek soup he made and goose breast I think.
  • FI is suffering through his first set of finals since he started work on the last of his bachelor's, so he's quite grouchy this week.  He normally makes all the dinners, but he texted to ask if I would pick up a pizza - um, happily if it keeps him from raging tonight.  lol

  • Tonight is left overs from the roast we made last night.

    Tomorrow is date night. For the last year, we've done 'New Recipe Date Night' on Wednesday nights (when possible). We've been working our way through a Curtis Stone cookbook. Tomorrows recipe is a chili. I'm curious as to how I'll like it compared to my FI's recipe for chili.

    Thursday will be left overs, Friday steak and beans.

    My parents are driving up to visit for the weekend (14 hour round trip just to see us for 1.5 days! they are the bestest). So we'll cook up a holiday-esque lamb dish on saturday and I'll make a cheesecake, since FI works Christmas Day, we wont be able to go down to see them until Boxing Day so we will miss the big dinner.

  • Tonight I'm making chicken breasts stuffed with goat cheese and asparagus. And sweet potatoes for a side. 

    Wednesday - turkey meatloaf 
    Thursday - possibly chicken marsala. I haven't decided yet. 
  • Tonight I'm working out with my trainer from 7-8, and I hate eating soon before I work out, so it'll prob just be a lean cuisine.

    Tomorrow night, one of my BMs is coming over and we're gonna cook something, but we don't know what yet.  Maybe seabass.  I'll have to see what the grocery store has.

    I'm not sure on Thursday, either - FI said he might want to go out, but I think that's stupid because we're going to NYC this weekend, and I don't want to waste money on dinner on Thursday night if we're going to be eating out most of the weekend

  • Tuesday is Taco Tuesday in our house most weeks. I'm thinking tonight we'll break out the new fajita pans we got as wedding gifts! 

    Last night was hotdogs and macaroni...well, because we behave like small children at times. :-)

    Tomorrow I'm thinking we'll do some sort of chicken, steamed veggies and potatoes. 

    Thursday is my holiday party so roast beef, mashed potatoes, green bean casserole, steamed broccoli and salad!
  • I will be ordering in Baked Ziti tonight to have with my wine and leftover brownies.  Yum

    Tomorrow we are taking my future step kids to dinner so probably a diner.

    Thursday is my BFF;s book release party so there will be lots of yummy food.

  • We've been eating leftovers for like 4 or 5 days so I want to make something yummy and fresh. Salmon sounds good...maybe I'll make it with the new bottle of chile lime Cholula I picked up last night. And that'll get me out of taking one of those god-awful fish oil supplements.

    We have my company holiday party on Thursday, which always involves copious amounts of fancy appetizers and lots of booze. Then Sunday we're going to Frankenmuth (aka Little Bavaria aka Christmas City USA) so there will definitely be fudge, gourmet popcorn, hot pretzels and beer. I should probably just eat celery the rest of the week.

  • I made citrus habanero  yellowtail fillets with lemongrass last night, super bright and citrusy!  

    I've also been playing around and made a veggie based cream substitute for soups and sauces, so I see a dairy free NE Clam Chowder in the cards this week.

  • This recipe that I sort of just invented. I used to buy the Philadelphia cooking cream for this and then it went away (at all the grocery stores around here anyways). So I figured out how to basically make my own version of it.

    So I bake 4 pork chops in the oven. Cook a box of bow tie pasta on the stove. In a large skillet, sautee butter, garlic, and head of chopped spinach. Then I put on low and add an entire container of sour cream plus a little lemon, cracked pepper, and lots of Italian spices. Mix around until the sour cream is all melty and saucy. When the pork chops are done, I cut them into bite size and mix into the sauce. Serve it over the noodles.

  • I'm making crab cakes tonight. Well the crab cakes I made last night but H called me just before they went into the oven to tell me he'd already eaten. Grrrr. 

    Tomorrow I'm going out with some friends so it's an every man for himself night.

  • I volunteer Tuesday nights at a school tutoring kids in reading. Tonight is our end of the semester party, so tonight's dinner will be subs from a local shop, cupcakes, and other goodies.

    Nothing else exciting planned the rest of the week. Although, I did make chicken topped with rosemary, apples, and bleu cheese last night, and that was delicious!

    Saturday I'm thinking we will try out a pizza recipe from a pizza on the grill cookbook my mom got us at my bridal shower (along with the pizza stone she got us too).
  • I work until 9 tonight, so Fi will probably eat leftover scalloped potatoes and ham from last night. I'm making pot roast wednesday though!

  • It is breakfast for dinner tonight. Ham, cheese and chive frittatas and cheesy hash browns. Maybe some bacon if I feel like it.
  • Tonight, the department is taking our team out to make pizza and have wine. So pizza and wine night! Tomorrow, I think I'll make eggplant parm with cauliflower gratin (That really means popping my trader joe's frozen food in the oven.) Thursday night is FI's holiday party, so I guess I'll have to figure something out for myself. And Friday is my holiday party :)

  • I'm making truffles today. so I imagine dinner will be something frozen.

    So will lunch. I just realized I only had some applesauce and like, 2 oreos food wise today. Oops.

    My mom dropped off a big thing of vegetable soup that she made so we're having that. 
  • We had a huge party this weekend and have all kinds of yummy leftovers. Last night we just had a smorgasborg of shrimp, bacon wrapped dates stuffed with herbed goat cheese (omg), caprese skewers, a bunch of cheese/meat/crackers, and chicken kebabs. Plus wine of course.

    Tonight it will be the same. And tomorrow. And the day after that...

  • FI is playing soccer tonight, so I'm going to make him tacos when he gets home. I'm going to have box mac & cheese and maybe have some Brie for late lunch since we went home early.

    I made spaghetti squash with bolognese from scratch for tonight, which came out pretty good.  Tomorrow I'm going to marinate chicken in lemon and za'atar, then bake it and we'll have green beans on the side. We've also been snacking on triple creme and manchego with apple slices.  Definitely looking forward to the leftovers for lunches.  Thursday we have our second catering tasting (!!!), and Friday we have our first holiday party of the year, so those will be never-ending food trains.  

    Food is rad.  Cheese is especially rad.
