NYE dinner

I know I can always count on Knotties for food recos (hell, I could count on you to move a body) so I need suggestions for a fancy NYE dinner.

We normally keep Christmas Eve to ourselves, no parties, make something we've never cooked before, see the light show, go to "midnight" mass, then take the dogs for a late walk (it's SO quiet and peaceful at midnight on Christmas Eve!). But this year he booked us to be at his mom's house, grrr, and his friends we were going to spend NYE with got hockey tickets instead, so we're moving fancy dinner to NYE.

What should we cook?? We've done live lobsters and lamb chops. I was thinking oysters Rockefeller (with a steak) but H said he's not sure he liked them enough for that to be "the thing" and the effort:enjoyment level might not be worth it. Hmph.

Maybe a foolproof homemade pasta recipe? He doesn't eat mushrooms or anything that tastes like alcohol (even if it's cooked off, so something like steak Diane is a no). We have a grill, cast iron cookware, dutch oven, etc to work with (pretty well stocked kitchen). I do not, however, have a pasta roller. Or a blow torch.

  • I don't think I can help much since I'm pretty sure my NYE will consist of pizza this year (we have my FI's kids) and a lot of champagne once we put them to bed haha

  • One of my favorite fancy restaurants is Gramercy Tavern in NYC. My mom got me their cookbook for Christmas last year. I've made their meatball and mashed potato recipe twice, and H and I both love it! He's an extremely picky eater, so whenever he likes something that is beyond his standard faves, I consider it success.

    Anyways, here's a link to the recipe. It is pretty time intensive, but you could do the garlic puree a week ahead of time. The onions are braised in red wine, but I don't think they taste like wine at all.

    Prime rib is always a great idea. And you can do it in the slow cooker. mmmm dead animal.

    I did NOT know that! Wonder if H will go for it. He eats prime rib occasionally but doesn't like how fatty it is. Meanwhile I had a piece bigger than my face for my birthday dinner.

    That sounds really good, but neither of us like onions and H won't eat meatballs.

It'll just need a little bit longer based off the size of yo meat. But I do recommend searing it before putting it in the slow cooker. It tends to be gray and yucky looking otherwise.

  • We made our own sushi last year for Christmas eve. Nothing fancy...just rolls with rice, cucumber, avocado, and shrimp. (DH only eats shrimp for seafood). I also put sesame seeds and spicy mayo on mine, and a side of raw ahi tuna for me.

    See I can't handle any kind of cow in the crockpot because it always comes out tasting like pot roast and I hate pot roast.

  • My go to is crab legs. They take no friggin time to cook, just boil/bake/steam for 5-10 minutes and voila! Twice baked potatoes are also fancy.

    I've made my own ricotta, and it's the same recipe for a few other cheeses. It's very easy. It's kind of annoying how little you get though, for how much milk you use. It definitely costs more than just buying the damn cheese outright.

    I fuckin love risotto. I wish he'd eat mushrooms, gahdammit.

    After we made lobsters I made a lobster stock with the shells for a seafood risotto, with pesto grilled shrimp on top... aaahhhhhmazing.

    I think we'll have a shrimp cocktail as an app no matter what... we eat salmon about once a week and crab legs every summer when we go camping so they don't really fit the "never made it before" criteria. Which I know is dumb, I just like the added memorability of it.

  • Our favorite NYE dinner is seafood fondue (NOT the typical fondue), called Down East Delight.
    It's made with sauteed scallops, shrimp, crab, lobster, oysters (if you like them, isn't required), mixed with cream of mushroom soup, but can be made with cream of celery.  We thin it with wine, but can be thinned with any liquid of choice.  add a little butter, pinch of salt, and pinch of paprika, and done!  Put into the fondue pot, and dip fondue bread into it.  Mmmm, sooo good!

    I've never made cheese. There's a couple of places nearby that make fantastic beautiful fresh cheese, so never felt the need.

    I've never had duck. We were underwhelmed at our lamb chops last year, but that could have been operator error.

    Is Cornish hen like squab? I've had squab and didn't care for it.

  • What about a mini-Thanksgiving? The year H and I lived in the Bay Area, we couldn't afford to go home for turkey day, so I did a scaled back Thanksgiving dinner. I made a small roasted chicken, mashed potatoes, stuffing, sweet potato casserole, and rolls. And we didn't have to fight anyone else for seconds and leftovers.
