To all the awesome ladies that recommended Skinny Taste

I just wanted to give a shout out to you guys. If anyone remembers my Fi vent post a couple weeks ago about him wanting (and not wanting) to be on a diet, I actually made the turkey and sweet potato shepherd's pie that evening. I didn't tell him it was low fat. He came home and looked at it dubiously, but as soon as he tried some he was like "this is really fantastic." Then I spilled the beans and told him all about the website and the advice I got here.

Now he has it bookmarked on his computer and looked up recipes with me yesterday that we can make tomorrow night for dinner. He wanted his infamous cheese steak yesterday so I said "do your thing" and after he ate it he said "you know what, I didn't enjoy that nearly as much as I thought I was going to, I think my body doesn't want all that heavy food." 

So, if he still wants to fall off the wagon now and then that's fine with me, but thanks to your recommendation he's all about this yummy healthy food and this website. He even wants to buy a mandolin and try zoodles. Anyway, long story short, thanks guys!

    Yay!!!! I'm SOOO glad that you and your FI like the website and are using it! I cook for my FIL and bring it to the nursing home when we visit. He shares the food I make him with his friends on the floor and they love it too! A few nights ago I made the turkey taco chili Mac and H and I both LOVED IT!!! Your FI may not want anymore cheesesteaks after he eats that! Lol Be VERY careful with using a mandolin. It is SUPER SHARP!!! I sliced my thumb twice on it.

  • I know @decembergrl2014 I am an awful combination of clumsy and faint, so the last time I cut my finger dicing squash I ended up on the floor. I told him he has to cut the zoodles. :)

  • I think that there is actually a Skinnytaste version of a cheesesteak. I have been cooking with Skinnytaste's recipes for a few years now, and I love her cookbook

  • I've been using her blog for years and now have the cookbook. Many of my fiance's favorite recipes I make are from her. Making the baked potato soup tonight, perfect for the cold rainy weather here!

    YES the chicken pot pie soup is awesome! This will be my first time trying the baked potato, I'm excited. 
  • I will have to check out that website. We actually had a long talk this morning because DH has gained 60 lbs since he quit smoking and I couldn't care less, but he is taking hard and being all self conscious. So I was like I can't snack healthy for you, I eat strawberries and I can't eat them for you while you're downing a bag of chips. So he really wants to change now. Most of the Pinterest recipes are all cheese and pasta so I'll definitely look on this site!

    How short of a time was that in?? That's great if you couldn't care less what he LOOKS like, but that doesn't sound healthy. I would certainly be concerned. 

    Pinterest is what you make of it. It's not "all cheese and pasta" unless the people you follow only pin cheese and pasta. Mine is full of vegetables.

    Mine is all cheese and pasta. But that's because they are my main food groups. NO SHAME.

    Yep, mine are mostly vegetable and healthy pins. It is definitely what you make of it. It can be hard to sift through all the pizza casserole and cowboy caviar pins, but once you start following clean eating pinterest boards it's a lot easier. I hadto unfollow a ton of people's food boards because they were unhealthy.

    And I love SkinnyTaste! She has such a great variety of recipes.

    It's been over a period of 2 years, so still unhealthy but not like it happened in 2 months. He was also a scrawny 140 lbs, so for him 200 seems insane but it's really not that bad/ higher than average. 
    In the beginning he was so irritable if I told him to slow down on the chips he would say "would you rather I smoked?!" so I just let him eat and didn't press the issue. But now that he's over the hump, we do need to work on eating better together.

  • Another really good website that can also be accessed on Pinterest is Budget Bytes <click>.  She has some great breakdowns of price of ingredients, and her recipes that are relatively simple, especially in terms of ingredients.   She has a Bachelor's in Nutrition, and I find that her recipes are easily modifiable, which is good since she likes spicy and DH can't handle spicy.

  • Kalyn's Kitchen is a really good one with healthy meals (clicky), and she's on Pinterest.  I think she goes by South Beach diet rules, but a lot of her recipes include whole grains, and they're easy and yummy.  My favorite is her pesto chicken (clicky), She has pesto recipes but I use jarred, so I pour the oil off the top of the pesto so it's not all oily, and then serve it over quinoa or spaghetti squash.  

    That's awesome that your FI is into it!  SkinnyTaste is great, I really need to try more of those recipes.
