I wasn't sure where the best place for this question would be so please let me know if this should be moved to a different board.
We're currently looking into different caterers and so far have gotten quotes from two that we like and are in our price range. One caterer charges an 18% gratuity up front. The other doesn't charge a gratuity at all and asks us to tip based on our level of satisfaction. So far so good.
In addition to the food line items the quote for the second caterer also includes things like linen rental, china upgrade, labor, and a kitchen fee. We want to make sure we budget correctly which means figuring out how much the tip will likely be in the end. We're not sure whether we should estimate tip based on the grand total, including all the additional items, or just the food portion of the bill.
How would you handle tipping in this case?
