Anyone know a good muffin recipe?

I am visiting one of my girlfriends on Sunday who just had the most adorable baby girl! I can't wait.

 

I am wanting to bring some food over because she is, understandably, exhausted. I thought I would bring some chicken soup, pasta sauce, and some other goodies.

 

She loves muffins, so I wanted to bring some blueberry muffins. Anyone have a good recipe for this? Thanks, guys!

    I usually do boxed too! I was thinking I would try to expand a little! I've done orange zest, but never lemon. Hmm...sounds good.

  • I buy the little packets of muffin mix. It's delicous! i added a little sugar on top and don't cook it quite as long as it calls for,

    Yep, I do boxed muffins too. Besides blueberry, there is this awesome Betty Crocker cinnamon streusel kind that is MY JAM.

  • Oh, I just remembered something else! My mom used to mix a little powdered sugar and water, and then drizzle that on the muffins when they are warm. Made for a delicious glaze!

  • Costco muffins are good. Also Starbucks sells muffins.

    I don't make muffins....this is not helpful.

    I was at Costco yesterday and they were baking muffins.  It made me so mad.  They smelled so good. But why would I need 36 muffins?

    It's important to have goals. Your goal is to eat 36 muffins.
  • You can freeze them, FYI. Then you can cut them in half and stick them in the toaster oven. Probably with butter. And they're even better than they were fresh.

    That's a pretty big goal.  I'm pretty sure my fattiness has a limit. That limit might be 30 muffins.  So close.

  • This is a whole breakfast cake instead of a breakfast cupcake (because let's be real here--that's all muffins are).  It is SO good!  Good enough that I make it more often than the packets, and I'm pretty lazy.

  • I think this is the one I use....it states Strawberry and Rhubarb (which is excellent) but you can use the base recipe for any fruit - apples, blueberries, raspberries.  Heck I've even substituted chocolate for real splurge.  I second the lemon jest with blueberries it is delicious!

    Or on the cake theme this is to die for as well...  Pear Coffee Cake (again great base recipe for any fruit)
