how long before wedding should we make the rsvp deadline

When does your catering need a final headcount? We did two weeks so we have time to track down any missing rsvps and get final numbers to the caterer. They only needed 3 days notice though.

It depends on when you need final numbers, but usually 2-3 weeks ahead of the wedding.

Then make it 3. That will give you time to track down the people that don't RSVP.

And for all that's good in the world, don't let people know that you "really don't need it until X date" because they will wait until "x date" to let you know.
You will need to hunt people down.

I would also go with 3 weeks before so that you can track people down prior to the deadline. Don't make it too early though, as some people may not know their schedules that far in advance, so you'll end up with more unanswered replies and "I don't know".
