Best brunch ever

JTFC. I found the best recipe for brunch and made it for my mother and sister for Mother's day.  It is Anne Burrell's recipe, (the one with the crazy blonde hair on food network).  Her Lemon Ricotta Pancakes with Macerated Strawberry Coulis were a hit.  I have never tasted anything like them.  They were rather labor-intensive for pancakes, but sooooo worth it.  I also made oven roasted maple-bacon (courtesy of Ina Garten), and homefries (courtesy of William's-Sonoma.) I served brunch with peach bellinis. Thanks for letting me AW. Here are the recipes.  I served the pancakes with whipped cream instead of confectioner's sugar.

OMG this looks amazing! Must make.

If I want a good brunch I'll just go out somewhere because I'm lazy; but I make these pancakes whenever I'm feeling something other than an omelette:

I'm a sucker for anything with a runny egg on top - crab cakes eggs Benedict, breakfast poutine, just toast with avocado. But the best brunch is one I don't make myself.

I didn't think I'd like Vegan pancakes, but I read the recipe and it sounds really good. Well, shit, now I have a lot of entertaining to do!

I have two tied for best brunch recipe. Whenever my extended family does brunch, they are both requested every time so others agree with me too.

The other is Breakfast Enchiladas. It doesn't have a recipe I follow, I just heard the idea and riffed on it myself. Basically I fill tortillas with scrambled eggs, crumbled turkey sausage, cooked peppers and onions and cheese and cover the rolled, filled tortillas in red enchilada sauce, top with more cheese and bake until hot and bubbly.

I think you suggested those when I posted about Easter brunch, mushroom! Those were SUCH a hit and SOOOO yummy.

lolo, I love runny eggs too! Currently, I'm trying to perfect the crispy egg by Chef Frank of NYC's Sauce. Its the perfect balance of crispiness and runny yolk. Just view THIS amazing video, a work of art, if you will.

@dolewhipper Yes, I most likely did recommend them before. I use any excuse to think of those delicious potatoes and enchiladas. I am so glad they were a hit for you too!

It's SO good! You can really taste the cinnamon and maple syrup in the batter. And I like that there are chia seeds in them because it keeps me full for a longer time!

I made a french toast bake for the first time this weekend for FMIL. Everyone said it was tasty and almost all of it was gone when we left- she is a nibbler usually as is FFIL, and they both took seconds!
