  • I just can't get enough of this unseasonably warm weather, so it's an outdoor grilling kind of night!

    - grilled herb & garlic pork sausages
    - grilled asparagus & mushrooms (with olive oil, garlic, salt & pepper)
    - salad
    - fresh strawberries
    - chilled Chardonnay

  • We are having vegan sausage rolls with homemade tomato sauce and salad.

    FI is vegan and a SAHD, he does most of the cooking.
  • We're having steak and oven roasted potatoes. I crave red meat.
  • We've been getting Blue Apron, and tonight's meal is Steamed Cod with Pickled Ramps.

    I'm regretting clicking on this thread all of your dinners sound amazing. This week has been one of my interesting "I can't go shopping until Friday what can I make" weeks.

    I'm most likely making stir fry with the random half bag of frozen shrimp, some random frozen veggies, and all the sauces and spices I have that sound Asian inspired.

    i wish i had better grilling skills!  I am a mess with that contraption.  Sausage and peppers sounds delicious too!

    I'm sick and I don't really feel like cooking. H did dinner last night so I probably should at least pitch in tonight.

    I think I can manage making jambalaya. H mentioned he wanted it last week. I said I would go to the store today to pick up eggs. I can grab the necessary stuff for jambalaya and convince H to help me dice. That will be tasty and make me feel less awful about the pizza we are undoubtedly eating tomorrow when the guys come over.

    This is really stream of consciousness, but I'm sick and I can't make more sense.

  • I'm going to make a whole grain pasta with lemon juice, garlic, and kale. I'll also make a side salad most likely.

  • I'm making asian-style chicken kebabs - the marinade for them is delicious, and I always intermingle the pieces of chicken with chunks of onion and bell peppers on the skewers. Served with a side of rice, it's a super-easy, delicious meal.

  • Probably Taco Bell.

    But last night I made a roasted chicken:
    1) Preheat oven to 300 degrees
    2) Make a bed of veggies/potatoes in your pan (onions/carrots/etc)
    3) Rub some garlic, oil, salt, and pepper all over the chicken.  Shove 1/2 a lemon inside, put it on the veggie/potato bed, and cover with foil.
    4) Shove that sucker in the oven for 90 minutes.
    5) Remove the foil and crank the oven up to 450 for another 20 minutes to finish cooking and crisp the skin.
    6) Let rest 10 minutes before serving.

    It does take awhile, we eat on the late side and 90 minutes of handsoff time lets me workout/shower/whatever else I need to do in the evening.

    We made a chicken on our smoker Sunday night and it was delicious!

  • It's "use-whatever-is-in-the-fridge-Tuesday" at our house... We've been trying to minimize grocery store trips (and grocery bills), as well as wasted food.

    I found ground turkey in the freezer, and we have half a head of romaine lettuce that will go bad if (when) I forget about it again. I think I am going to make lettuce wraps with ground turkey and leftover rice and beans, and also roasted cauliflower.

    On that note - does anyone else love roasted cauliflower as much as I do? Igenerally think cauliflower is kind of meh, but hot damn, is it good roasted with a little oil, salt, pepper, garlic powder, and cumin.

  • Taco Tuesday over here!  Although I've been making mine as "burrito bowls" with quinoa, ground beef, a little light sour cream, tomatoes, hot sauce, and avocado nom nom.  

    This is a fantastic recipe we just tried for the first time last night...husband approved!

    Also this is a fabulous marinade for grilled chicken or salmon
    or on a salad with arugula and shaved parm.

    Grilling season is herrrrrre.  Can't wait to grill all my favorite treats!

  • @tfmrserwin YES to roasted cauliflower... So flipping good. When I get a craving for wings, I toss them lightly in buffalo sauce.

    We have been grilling up a bunch of chicken, turkey burgers, chicken sausage and loads of veggies to repurpose for lunches and dinners through the week. Makes packing lunches for work much easier!

    @tfmrserwin- I love it too. I buy a cauliflower a week to support the habit. I throw it into salads, omelets, and eat it plain. It's a favorite.

    @AlisonM23- I do the same thing with buffalo sauce. It's been a while- I kinda forgot about it. Thanks for the reminder!

  • Last night I went to my friend's house and she made baked chicken with a tomato, feta and orzo salad. Tonight I am going to my parent's and my mom is making rotisserie chicken with rice and peas and probably a salad of some sort.
