OMG FOOD!!!

I finally got time for lunch and made myself a sandwich with buffalo chicken, dill havarti, lettuce, tomato, and avocado. I feel like my face hole just died and went to heaven!

    I'm trying out a new taco place with a girlfriend. They're kind of expensive, but supposed to be ah-mazing.

  • I'm heading up to the BFFs to meet her new little baby!  So excited.  She said her husband went to the store and bought pork chops and veggies yesterday, and I picked up a caesar salad at Costco on my lunch break, so I'll cook up the chops and veggies for us to eat while we're there.  

    Last night's dinner was supposed to be an enchilada pasta casserole but then the neighbors asked us to go to Indian food with them, so um yeah, did that and I got drunk.  Casserole will likely be tomorrow night.

  • Sounds yum! For lunch I had a veggie burger with sprouts, onions, and mushrooms. It was delicious. For dinner, I have no clue yet. I'm going over to a yoga class then may make some brown rice and beans or spaghetti when I get back.

  • Sounds like a perfect sandwich! Sandwiches are my favorite food delivery system. If I had to choose one food format forever, it would be sandwiches.

    I don't know what's for dinner tonight, but last night I made gnocchi, shrimp, and Brussels sprouts. I sliced the Brussels sprouts thin, sauteed them with onion, then threw in chopped shrimp, tomato and basil from the garden, and some random spices. Then I cooked the gnocchi and coated it with goat cheese, and then tossed it with the shrimp and vegetables and sprinkled it with more cheese. It was excellent.

  • Brat burgers, grilled corn on the cob, baked beans and potato salad for us tonight. I am loving my new grill we finally got put together.
  • Lunch was your standard salad in a jar I made up on Sunday. Then I added some avocado today.


    Dinner is grilled chicken breast, grilled squash and zucchini, then pasta with a pesto cream sauce.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated.

    @lyndausvi Please explain salad in a jar. If it's something you can make up on Sunday and then still be fresh several days later then I must know about it. I need better healthy/quick lunch options that use loads of vegetables.

    Dinner tonight is sloppy joe's (leftovers, my H made them Sunday). I'm all by myself Mon & Tues nights so I'm usually boring. However, I think I'm going to make a batch of homemade slaw using a zillion different veggies from our farm share (thanks to knottie suggestions).
  • I made black bean tacos and  home made guacamole.  I just set up all the fixings on the table in small bowls. My FI loved them.
  • @lyndausvi awesome thanks! They stay fresh through Friday if you make them Sunday? Any ingredients you've had problems with? (obviously you wouldn't put in avocado... but all the other veggies are good to go?) Brilliant stuff...

    I haven't had a problem with things tasting bad by Friday.   My salads are pretty basic though. It might because I do not put the dressing on the bottom. I would think that would effect how the bottom veggies tastes a few days later. 

     I work from home, so grabbing the dressing isn't a big deal.  And mostly I just use the balsamic glaze to get a little hit of dressing, but not drown the salad in liquid.  The glaze on the bottom would be a bitch to get out.

     I like it because it's easier to prep the food together.  I simply wash, peel and chop.  Line up the jars. And start adding the veggies into each one.     Then when I need the jar it's a simple flip, toss and go.  Unless you want to add things like avocado.  Which doesn't take long.
