What's for supper?

What are y'all cooking tonight?

I'm thinking of trying chicken marsala. I've never made it before so I'm a little nervous! We eat a lot of chicken and I'm getting tired of the same old thing.

  • Chicken marsala is super easy, it's one of H's favorites too.  

    We're having french dip sandwiches and oven fries.  I am attempting to work out 2 weekday nights and 1 weekend day a week, so the nights I work out, dinner has to be quick and easy.

    I try different ones all the time but this one I used recently and it was good http://www.davidlebovitz.com/2015/02/chicken-marsala-recipe/  I do it over mashed potatoes or egg noodles.

    I'm making salisbury steak, mashed potatoes, and veggies. We try to have family dinner night with my mom once a week, but we've missed the last couple of weeks. She's coming tonight, and I'm excited!

    @thefanciestbeckler I made Salisbury steak last night with mashed potatoes and green beans. That's what I'm eat now!

  • Tonight will be very quick and easy: stir fry with frozen shrimp, bean sprouts, peapods, mushrooms, cabbage, and maybe baby corn if I have a can in the pantry. Served over rice. A bit boring but cleans out veggies that might otherwise not last through the end of the week.

    The chicken marsala sounds amazing...

  • Target *finally* bought back their "roast in the bag" turkey breasts, so that's what we are having!  I bought 4 over the weekend and packed my second freezer.

    If I eat one, I can go buy more!!

  • My girlfriends are coming over for dinner and we're doing breakfast for dinner. French toast, eggs, and turkey bacon. I'm actually rather excited because french toast is not a thing I ever make for myself.

    I'm excited to hear about all the dinners. I've been in a bit of a cooking rut lately and I need new ideas.

    The plan is Paninis, last time we had this I had a buffalo chicken, one and H made basically a hot ham and cheese, little one loves grilled cheese so this is a typical dinner when he is not at his dads house.. I use a sourdough bread (baked fresh at Kroger's) and provolone cheese. It is a quick and easy work night dinner.

  • Probably left over chili or Chinese.

  • Kale tacos. I sautée a jalepeno and yellow pepper, then add a can of black beans, then wilt in about 2 large bunches of kale. I mix the taco seasoning with water and use that as my liquid. So good.
  • I'm now weirded out.  Saveur magazine just posted a recipe 32 minutes ago for Chicken Marsala on their Facebook page... and it wasn't one of those sponsored posts that pulls from your internet search history.  http://www.saveur.com/article/Recipes/Classic-Chicken-Marsala?src=SOC&dom=fb

  • I just finished prepping chicken, stuffing and green beans in the crockpot; it should be ready by the time I get home from the gym/FI gets back from training. I've never made it before, but we love chicken, stuffing and green beans, so hopefully it's good!

  • I forgot to marinate chicken for honey ginger chicken thighs. So I'll probably stop and grab a piece of fish or something on my way home from work. And cauliflower on the side.

  • Not sure.  Dad is in town for a funeral and is taking me out to dinner (DH has to work late).  
  • Not sure. All of our meat is in the freezer and I really don't feel like stopping at the store on my way home. Hoping I can convince H to run out and grab something for us instead. Or I'll be having boxed mac n cheese for dinner, which really isn't a terrible idea.
  • I might make fish patties before the leftover salmon goes bad. If not that, probably something with burger. We'll see. I'm having a hard time coming up with good meals because I'm trying to use what we have on hand. Money's been tight so I've been trying not to go to the store for about two weeks now.

  • Left over chill and microwave rice.  I'm waiting for a break in my class to go nuke it.  I'm starving.  And it's parent teacher interviews tonight at work, which I'm missing, and the parent volunteers have put together a huge spread for dinner.  :(  

  • I had a terrible day and didn't feel like cooking haha. Had some spinach salad that was about to go bad, threw on a can of tuna and chopped up some spicy olives w/ oil as a dressing. It was pretty good. I was mostly looking for easy and filling.

    I did that! It is awesome! Planning on starting the workouts back in the next few days. it is such a practical program!
