Hilton Grand Vacations - recommendations?

As a wedding gift, my parents are offering some of their points for the HGV club.  We had our hearts set on Ireland, but the HGV options aren't really impressing me.  I would rather do Ireland our way, and pick hotels in different spots and travel more.

FI and I want to base our vacation on the hotel and in a place where you can do a lot for 8 days.  (we could possibly switch to another location a short flight away, but only one).

Is anyone in the Hilton Grand Vacation club on here or know of someone who is?  Do you recommend a location/hotel for us to use?  Preferably overseas, so not the Hawaii one.

    I thought the only overseas option was Scotland. Can you use the points at any Hilton? If any Hilton, I would go to Helsinki. Lots of jumping off points from there.

    I did go to the HGV website and yes, the overseas options look very thin.  The catalog my parents gave me (also called RCI) is as big as a phone book. lol.
