Help! Our families live on opposite sides of the world!

So my fiancé and I don't even know how to begin wedding planning. He is Hindu and I was raised Catholic and it's super important to both of us we honor both cultures and their wedding traditions. Ideally, we'd do just one fusion wedding. Here's the challenge we face, his family lives in Mumbai and my whole family lives in Florida. We met and currently live in New Jersey. 

We've thought of everything. Do we do one wedding? Do we do two weddings? Do we do a wedding halfway between both places?

One wedding is the ideal, however, no matter which location we choose we feel like we're prioritizing someone's side of the family over the other. And doing a destination wedding in the middle sounds like something outside our budget, as Hindu weddings run two to three days. Hosting two weddings would solve those issues, but I'm not sure I can justify that, it feels extravagantly silly. Plus as a teacher, I can't take that much time off! I only have summer's off and summers in Florida will give everyone a heat stroke and summer in Mumbai is monsoon season.
