Meeting after work will extend the day, but it should be a smooth one nonetheless.  I had a constructive meeting this morning with a great set of parents - just very supportive.  We are in a brief heatwave so I'm trying to figure out what to make for dinner that won't raise the house temp over 80.

    Non-heat/low heat related dinners:

Chicken salad sandwiches or Tuna Sandwich, Salad with chicken breast strips (pre-purchsed from the store) or a store bought roasted chicken with side of rice, quick roasted veggies. If you have a toaster oven you could also make dinner in that and just put it outside to cook so you don't have to worry about the house heating up. Not that toaster ovens usually heat up the house that much anyways.  I suppose a crock pot probably wouldn't heat up the house that much either if you have time for one of those.

Not too much to report over here. My family decided to last minute throw a Memorial Day get together but we're not going. We have a long volunteer event on Saturday and then we already have plans the rest of the weekend. And I don't want to be super exhausted going back into the work week.

@ei34 I'm a big fan of salads as well!  Or grill.  I'm not sure if you have an outdoor one but lately DH has just grilled chicken thighs and those are super easy.  I'm tempted to try the tik tok hack and get a sheet topper for the grill so we can do things like smashed tacos using ground chicken.

It's World IBD Day! We started in a fitting way with an infusion for Chiquita.  We got rerouted home so the ride back was an extra 10 minutes that we didn't want but oh well.

It's nice and warm and Chiquito has baseball tonight.  Here's hoping I can get by with a light jacket and not the down parka I was wearing 3 weeks ago!
  • Never heard of IBD day so googled. I should let my dad know, he has chron’s.
My advice on non heating house recipes: have the chef heat up his kitchen and order in. I’m not much help.
I’m glued to the Mackenzie Shrilla case. It got (re)circulated from a Netflix documentary that made #1, but there’s a few other ID shows and a dateline ep that digs deeper into it. Netflix kinda spins the light that a retrial is deserved, but the other shows tell you differently. Go into that same rabbit hole. Such a horrific story too.

@CharmedPam I started to pay attention once Chiquita was diagnosed and I need to start to familiarize with what we could expect.  Now I get the emails and social media feed from multiple IBD groups.
  • Thanks for checking in, feeling a little better each day. Thankfully I get to WFH so that’s been helping!

Healing vibes to Chiquita on IDB day (and every day)!

Thanks for the recs @banana468 and @levioosa.  A green salad with a protein takes up 2/3s of my dinner plate just about every night.  The kids are good with veggies but aren't big salad eaters though.  Last night I ended up going with black bean tacos with guac, no oven or stove needed but big flavor.
