    FYI for anyone who might be looking for places.... looks like we're going with The Landing in downtown Newport.  They already have a public brunch buffet so we're basically making a reservation for 60 people.  It will still be open to the public, but they will reserve a section of the dining room for us.  If my mom insists on a more private experience, we might go with Newport Beach Hotel & Suites.  They seem to have the next best prices.
