What to make with dinner on Saturday?

So I'm going to make dinner for BF on Saturday, to make it a cheap date night.

I'm going to make this garlic brown sugar chicken recipe, but I'm not sure what to put with it. I was thinking about carrots, and I still could do carrots but I've been eating lots for two weeks. I was also considering some kind of sweet potatoes?

But I was wondering if that would be too "sweet" of a meal overall?

Does anyone have any suggestions or recipes to put with the chicken?

    Do you like green bean casserole?

    roasted brussel sprouts or broccoli is always good, too.  i like to cut up veggies into chunks (onion, red potatoes, carrots, broccoli, brussels, squash, etc.) and toss them with olive oil, sea salt, and your choice of herbs and broil and roast them. 

    couscous, quinoa, or a mixed wild rice also sounds like it would be a nice starch to add to the meal, if you're interested.

    Spinach is always a plus for me.  Besides green beans and broccoli.

    Bren, that looks delish! I might have to try that recipe. I don't have any chicken breasts, but I have chicken thighs. Maybe if I debone them and take off the skin it'll work.

    How about brown rice as your carb and fresh snow peas as a veggie?

    Throw in some rice too. You can never go wrong with rice.

    I also vote for rolls :)  I made some awesome ones last night, but I don't think they'd go with "sweet" chicken, so feel free just to pop open the can :)

    Or rice pilaf. My mom makes it by cooking chopped onions in butter. Then you add the dry rice and cook until the rice starts to brown. Then you add water and a bouillon cube. It is super delicious.

    I made these for my FI last night and he loved them, I guess I had never made them before and they are suuuper easy.

    Slice 5 or 6 reg sized potatos up in thin slices

    or 3 to 4 if they are big ones. 

    Toss them in Garlic salt and pepper

    Put them on a tin foil sheet along with some sliced up onions and a few table spoons of butter and cover with the tin foil.  You can set it on a baking sheet if you want.  I put mine on for 400 about half hour to 40 min 

    Whenever you need a side you can always do that

    Or fresh green beens and bacon is really good as well.  Fry up the bacon first then put it together with the green beans and Saute.  Super easy too.
