    Do you make your own BBQ chicken?  I'm playing recipe collector for the next few months, so, while I can't really contribute productively until August, I'm snagging the good stuff :)

    Ok, so I have a menu list... which can be chosen from. I think it's too hard to plan what I will make for what day because what I am hungry for depends on how much energy I have. (Wow, hello run on sentence.) :)

    The list:
    Frozen italian meatballs and homemade marinera
    Leftover chorizo burgers (from our BBQ yesterday)
    Chicken baked in green chili and home grown parsley sauce

    Ahhh thank you SO much! I kept trying to figure it out and then finally just gave up! lol

    This week I'm just going to be buying the BBQ chicken...the night I'm making the potatoes I actually have to work kinda late so I won't really have time. But now that you mentioned it I think I may hunt down a good recipe for BBQ chicken so I can make it in the future!

    Oh and for collecting recipes try out Taste of Home, My Recipes, and Eating Well! They're the ones I mainly use and I've found tons of stuff that tastes amazing! :)

    I think Ma usually does bbq in the crockpot, but hers isn't my favorite.  I know it just does the shredded thing well.  :)

    And I will definitely start checking those out.  I got a sweet little recipe box for Christmas/my birthday from Grandma, and I'm anxious to start filling it.

    Aw, how cute! I have a really cute one too...but lately I haven't felt like writing recipes out because I'm lazy/don't have time! On those websites you can save the recipe and it will compile your grocery list for those dinners. That's the ONLY reason my grocery list is organized like that :)

    We made chicken tortilla soup yesterday which will hopefully last a few more days. Tonight we're making arepas with black bean filling which will also hopefully last a few days. Then we'll probably do breakfast for dinner...maybe bacon and eggs and homemade waffles.

    Here it is!

    Chicken Tortilla Soup
    1 1/2 lbs boneless skinless chicken breast
    8 c. low sodium chicken broth
    1 large white onion, quartered and peeled
    4 medium garlic cloves, peeled
    8-10 sprigs fresh cilantro
    2 tsp dried oregano
    8 6-inch corn tortillas, cut into 1/2 inch wide strips
    2 T vegetable oil
    2 medium tomatoes, quartered
    1 jalapeno chili, seeds and ribs removed
    1 1/2 tsp minced chipotle in adobo sauce

    Garnishes: lime wedges, avocado slices, Monterey Jack cheese, cilantro, jalapeno, sour cream

    1. Bring the chicken, broth, 2 onion quarters, 2 garlic cloves, cilantro sprigs, and 1/2 tsp salt to boil over medium high hight in a large saucepan.  Reduce heat to low, cover, and simmer until chicken is cooked through, about 20 minutes.  Using tongs, transfer chicken to a plate.  Pour the broth through a strainer, discarding the solids.  When the chicken is cool enough to handle, shred into bite size pieces.

    2.  Meanwhile, heat oven to 425F.  Toss tortilla strips with 1 T of the oil, spread them out over a baking sheet, and bake, stirring occasionally until crisp and golden.  Season with salt and transfer to paper towel-lined plate.

    3.  Puree the tomatoes, remaining 2 onion quarters, remaining 2 garlic cloves, jalapeno, 1 1/2 tsp of the chipotle, and 1/4 tsp salt in a food processor until smooth.  Heat the remaining 1T oil in a large Dutch oven over high heat until simmering.  Add the pureed mixture and cook, stirring frequently, until darkened in color, about 10 minutes.  Stir in the strained broth and bring to a boil, then reduce heat to low and simmer for about 15 minutes.

    4.  Stir in the remaining chipotle to taste.  Add the shredded chicken and simmer until heated through.  Place tortilla strips in the bottom of individual bowls, ladle soup over the top, and garnish!
