Quinoa?

Does anyone eat this? If so...share recipies please!  I just got some and I don't know what to do with it!

    I love it!  You can substitute it for rice in most dishes - I do stuffed peppers with quinoa, shredded chicken, refried beans, and covered in cheddar.  It's super filling, high in fiber, and is considered a "super food".

    Also, any recipe that uses couscous is a great one for quinoa.  Check out FoodNetwork for couscous salads.

    Please forgive the fact that it is from a bodybuilding website, but I got a similar recipe out of a magazine. it is a really versatile recipe.

    YUM! I love quinoa (unfortunately FI doesn't like the texture... although he says the same thing about brown rice :( ).

    Did you know that quinoa is a source of protein as well?

    I like it with stirfry. Or I substitute it for couscous (which lots of people think is a grain, but it is pasta) in a salad with lots of green onions, peppers, cucumbers, shredded carrots, chillies, olive oil, garlic, lemon juice, salt and pepper. Drool.

    Quinoa is awesome!  I like it chilled with lots of rice vinegar, some mandarin orange slices, sliced almonds, and scallions.  It's always a big hit as a side at BBQs and potlucks!

    I had never heard of this stuff, but came across it twice yesterday.  Once here in this thread, and once in my "What to Expect Before You're Expecting" book.  Apparently it's a great source of protein and is a good complex carb, and they highly suggest it for women who are pregnant or trying to get pregnant as studies have suggested it increases fertility.
