What's for dinner?

What are you having for dinner tonight?

I've got a crock pot full of chili waiting for me. It sucks, cause it's May, and I'm still making chili cause it's still that cold out side. But I'm excited, cause I do love my chili. I eat it with spagetti noodles.

    tonight we're having pizza and salad...

    but tomorrow night we're having chicken and veggie fajitas with avocado, frijoles rancheros topped with pico, and mexican rice.  mmmmm!!!

    @Beads:  I had chili with spaghetti noodles at a potluck once... it also had cinnamon (I think).  they called it Cincinnati chili.  it was different, but really good.  my favorite kind of chili is veggie and bean, or white bean chili (kind of like posole).

    Mmm... chili sounds good.  I make it over rice with cheese and a dollop of sour cream.

    Tonight we will have homemade ricotta ravioli with a light tomato sauce (diced tomatoes, garlic, basil, and a touch of olive oil), chicken breast, and a salad.

    I haven't decided yet. It's poring rain out, FI won't be eating at home tonight and to top it off I had a horrible day. Perusing delivery.com at the moment for something suitable.

    Wow Coco, tomorrow night's dinner sounds all fancy-smancy (mostly cause I have no idea what most of it is). I'm not sure I'd like cinnamon in my chili, although I do love it in a lot of things. I just make regular old chili with mixed beans, ground beef, tomato, and mushrooms.

    SKP - I wondered about putting it over rice as a change of pace sometime, but I think I would find it too bitsy to eat. If that makes any sense. Your ricotta ravioli sounds good though.

    mmmm chili! I like mine over spaghetti noodles too. Are you in the OH/KY area Beads? Its kind of a regional thing...

    Diner tonight is Pad Thai. I have been craving it like crazy, and so I want to learn how to make it. I'm doing chicken, not shrimp, b/c BF doesn't 'feel' like shrimp...<rolls eyes /> whatever...

    Left overs for us - we have some mongolian beef and brown rice (that I made Sunday), chicken fajitas with mexican rice (made Monday), and penne with pesto, chicken and broccoli (made yesterday). Not sure which one I want (maybe some of each?)

    @Beads...  it's actually one of my "quick dinners".  I just cook sliced chicken and veggies (onion, jalapenos, green peppers, mushrooms) on my wok that I use for stir fry with some mexican seasoning or marinade.  frijoles rancheros are just boiled pinto beans with a pico topping (healthier than refried)...  for the pico I just do chopped tomatoes, jalapenos, onions, and cilantro.  the mexican rice is going to be a new recipe, it might turn out horribly!

    lmwilber - No, I'm actually from Ontario. Everyone eats their chili with cheese on top and a bun to soak up the leftovers. I don't know how I ended up eating it with spagetti.

    FI makes his own spaghetti sauce, we had that on Monday night.  Left over spaghetti sauce goes into making pizza.  I like making the pizza dough from scratch, so its a Hawaiian pizza with jalapeno for dinner tonight!  Pizza belly time.

    I think that I'm going to try to poach halibut with a tarragon vinaigrette. We'll see how that turns out?? I'll serve it with some french bread and asparagus.

    Definitely a frozen pizza. We'll probably spend most of the evening packing...We move into our house next week. (between house stuff and finals at school I've been MIA for the past couple of weeks. What's goin on?)

    Leftover lasagna! I made it for dinner last night - FI's best friend had to put her dog down yesterday and I made the lasagna for her, to cheer her up, but we didn't eat much of it. So we're just heating it up tonight.

    FBD is working so I went and got fresh haddock(straight from my local fisherman!!) and Ima eat it allllllllllllll up!!  And roasted potatoes and salad.

    London broil with our secret marinade, roasted potatoes, and a veggie TBD. 

    My grandparents leave for their cruise tomorrow, so ma wanted to do something nice :)

    I'm having pizza, too! BF's family is in town for graduation, but they leave tomorrow. We're getting pizza for one last meal together.

    I had pizza for breakfast and lunch, so I think I'm going to mix it up and have a pizza Lean Pocket for dinner. BF is out of town and I am notorious for not liking to cook for just myself. There is already a bottle of wine open, so the minute I'm done w/ my run, I'm hitting the couch and starting up the DVR...

    Dinner tonight is simple...a box of Parmesan Rice-A-Roni with some kielbasa chopped up in it and a veggie on the side. 

    Tomorrow is the Lloyd's BBQ pork (on sale today for $3.99, usually $4.99, and I had a 75 cent coupon) that we'll make into sandwiches with some roasted potato wedges on the side.

    I made my concoction of multigrain pasta (rotini - mmm) tossed with sauteed onions, garlic and diced tomato with roasted zucchini slices and marinated chicken. Deeeeelish, and healthy too. I think my calories for the day came in under 1300. Psyched!!!

    I had a three-bean and sausage casserole, bacon cheddar chive biscuits, and salad! And lemon squares for dessert!

    Poaching is totally easy! You should all try it! I went to the store and discovered that I dont like tarragon. LOL. So I went with lemon thyme instead.

    And Halibut was $26 a pound! Oy Vay! So I bought tilapia instead. It was pretty tasty and easy though. :)

    FI has been craving mexican food lately...  I think it's because he hasn't been home in so long.  we ended up making guacamole to go with it!  and there are leftovers for lunch!  YUM.
