I'm eating whatever almost-good food is in the cafeteria. :p My roommate, boyfriend, and I do make a point of cooking together on the weekends though. Yesterday it was spaghetti with sauce made from scratch.

Oceana, I don't get how you have time to make all that! By the time I get home from work, it's just "What can I make that takes 15min or less?"

I know you're a busy woman, so what's your secret?

Also, part of my problem is not knowing what to make. I need to find a super simple vegetarian cookbook.

For the most part, we pick recipes that either a) require only about 15-20 minutes hands-on work, or b) are things that take 10 minutes of prep work and then do the rest in the oven. It sounds like a lot of work, but once you've made a recipe enough times, you get a rhythm and it doesn't take too long to do. We stirfry and broil/bake a lot, which doesn't require a whole lot of work/time. Tonight's dinner seriously took FI and I 15 minutes from counter to plate.

We also do a lot of prepping in advance. I'll usually take an hour over the weekend sometime and prep chopped veggies, sauces, etc. - whatever we'll need for the week. Every six months or so, I'll make a bunch of different meat rubs/seasonings and jar them up...they're great for quick and easy meals (meat + sprinkle of seasoning + oven time = dinner).

Oceana - I bought that teriyaki sauce today at Publix at your suggestion. It better be good! Wink Also, where do you find sherry vinegar? I've seen it called for in another recipe, but never can find it at the store. I always see cooking sherry, but never sherry vinegar.

Monday
Bay scallops with Israeli couscous and roasted butternut squash, zucchini, and tomatoes (it was delish)
Tuesday
1/2 Grilled Ribeye (seasoned with salt and pepper) with baked sweet potato and steamed green beans
Wednesday
Teriyaki chicken stir fry (with broccoli, snow peas, carrots, and brown rice)
Thursday
Pan fried tofu with Tikka Masala sauce, edamame, and naan
Friday
Steamed crab legs, corn on the cob, steamed green beans
Saturday
Barbecue at friend's house
Sunday
Probably will eat out

Sorry I don't have the recipes to share. I mostly look at recipes and make them my own, just using the recipe as a guideline. This is where I got the idea for the scallop and Israeli couscous recipe:

CLICK

I haven't really done my shopping list this week. I picked up tomatoes, scallops, and green beans at the store today after the gym.

All I need (I have all the protein) will be:
Tofu
Broccoli
Snow peas
Corn on the cob
Crab legs

I like this thread!

Seriously, best teriyaki sauce EVER. Try soaking skirt steak in it overnight and grilling that up....zoooooooooooomg. ::drooling::

Also, where do you find sherry vinegar? I've seen it called for in another recipe, but never can find it at the store. I always see cooking sherry, but never sherry vinegar.

I've yet to find sherry vinegar. I've looked everywhere. I sub red wine vinegar instead.
