Weekly Menu/Shopping List

Well, since my guy was out of town for the weekend, I'm doing the grocery shopping tonight!  So I have a grocery list and menu!!!

We're eating Paleo, so these are all recipes that are adapted to not have grains, dairy, salt, sugar, or legumes (beans).

Monday:
Chicken Chili (a salt-free version of this where I BBQ zucchini, yellow squash, mushrooms, and tomatoes to use in the chili: LINK)

Tuesday:
Miso Glazed Salmon (LINK)
Sesame Ginger Salad (LINK)

Wednesday:
Mexican lettuce wraps (saute ground beef in cumin, chipotle, chili powder, onion, garlic, & pepper, chop tomatoes, onions, jalapenos and cilantro to put on top... and some cheese and sour cream for non-Paleo dieters!  Then you put it all on top of Boston Bib Lettuce leaves)

Thursday:
Spinach, mushroom, sundried tomato (and goat cheese) burgers. (You take 4 cups of baby spinach, 1-2 cups of mushrooms (I love crimini), 1/2 cup sundried tomatoes, and 1.5 lbs of ground beef/veal/pork (a combination is best, but you can use any of those, or turkey if you prefer).  Blend in a food processor and make into patties - if not moist enough, add an egg.  Add chunks of goat cheese as you make the patties (mozzarella would work well, too).  Bake like normal burgers, but be careful because they cook super quick!  These are DELICIOUS and super healthy!

We leave for a cruise on Friday, so Thursday ends our menu for the week.

    Today is our two year dating anniversary, and we're making scallops with creme fraiche mashed potatoes tonight (link)

    Tuesday night will likely be breakfast for dinner or something quick.

    Then....Wednesday we leave for Vegas!! Wooot!

    Congrats!!!  Wow, my brother and his girlfriend celebrated their 2 year this past weekend... and we're rapidly approaching our 3rd... funny how time flies!

    What?! I so wish I could plan like that. I just went shopping last night. I got fresh vegetables, cheez-its, water, gatorade, vegetarian buffalo wings, vegan chocolate bars, diced extra firm tofu, Adobo, rice, Amy's Mexican Tamale Pie or something like that, Soy Ice Cream, Soy Ice Cream Bars, beans, Odawala protein drinks and vitamin c drinks, and some other stuff that mysteriously bounced my total north of $80.

    You're all welcome to plan out my meals, I can never do it :(. That's why I eat so much rice, tofu, and vegetables! You all probably save so much money going to the store with an actual list. I'm such an impulse food buyer.

    Alanna, I have that same problem!
    I also only ever cook for myself so I am not motivated to make any nice dinners.  I can't wait to live with the BF again and make some awesome dinners!

    Greek Style Pasta Skillet (supposed to make this Sunday but we went to BF's moms house instead!)

    Wednesday:
    Chicken Piccata
    Veggies

    Thursday:
    Broccoli and Cheddar Soup

    Friday:
    Sloppy Joes, maybe? If not something simple...

    Saturday:
    Out for my best friend's birthday dinner- Mexican Food!

    Sunday:
    Pasta Bake

    I have everything, thankfully, so no grocery shopping until this upcoming weekend for next week's menu!

    Also, how do you add in links for recipes?!
