Weekend Recap

How was everyone's weekend?

Mine was pretty good. Did my last brick before the Half Iron. Had dinner with my family. Napped, and got some cleaning done. I also scored a case of tomatoes for $10 that I'm going to make pasta sauce with :).

Re: Weekend Recap

  • Mine was pretty good. We had a lot of help moving in which made it fly by. And I'm so happy to be there. Even if we don't have shades on every window, or lights in every room... ha

Look at you and your homemade pasta sauce. Do you have a recipe in mind?
  • I spent most of my weekend doing absolutely nothing.  It was amazing.

On Saturday I baked oatmeal chocolate chip cookies.  And they are delicious!  On Sunday I finished the groomsman card design that I have been working on.  FI helped me figure out how to print on envelopes.  So now the card, cigar and envelope are all ready to go.  FI is asking one of his groomsman tonight.

  • Friday night I was at the theater hung out with some theater friends afterwards
Saturday did lunch with my mom and helped BF cleaned out the last of some stuff from his apartment we did dinner at the local diner
Sunday- watched football and ran some errands food shopping. Got vegetable rolls for dinner from the local sushi place, Very yummy.
Also BF handed the keys in to his aparment so he is officially done there now.  He posted a picture on FB of his empty apartment and wrote underneath, the end of an era and the start of our future.  I saw that and cried.  It made me so happy.

  • Jen: I will probably do atleast one batch of sweet sauce, and I may do one spicey. I'm going to oven roast the skins off the tomatoes and the peppers. I'll use garlic, basil, onion, and oregano as well. For the spicey I'll throw in extra garlic and crushed red pepper.

Looks like a lot of people are moving up in the world over the weekend :D

So just from your head? Not a specific recipe? That is one of my life aspirations, have recipes in my memory.

Things like pasta sauce I like to do more on feel than a recipe. Tomatoes acidity vary greatly based on season, type, and ripeness. To make a great sauce you really have to go by feel. At the end you can always add just a little sugar or honey and or salt to bring out the final flavors.

I'm always like this with fried apples, apple sauce, pie fillings, veggie casseroles etc. I'm going to start doing jams next year some of which may become wedding favors I'll probably be the same way with some of the odd flavors like black berry cabernet.

YAY!!! Friday. We are celebrating, well not really, it is FI's birthday too so we are technically celebrating that.

Oh, anyone know how to make homemade dog treats? Maggie is 3 or 21(doggy years) this weekend.

THAT is so cute.  Yay!  So excited for what's ahead :-)
  • Winged Pixie, your sauces sound delicious.  I have recently started making my own pasta, and it is so yummy and easy to do. Everyone should try it.

I worked most of the weekend.  Did watch some football, and both my college and NFL teams won--yay for that.

Starting to worry about the whole job situation . . .  and my boyfriend mentioned that he still has not bought my ring yet.  *Sigh* At least he said he'd want to go looking again.
  • I had a pretty relaxing weekend for once. I had my son Friday and Sunday. We just took it easy those days with BF. Made dinner and had movie nights. Saturday BF and I had a day alone and spent some time with longtime friends of mine. He had been sick since Labor Day and this was pretty much the first weekend where he was feeling back to normal. Of course, now back to the grind at work and parent teacher conferences on Wednesday. That should be fun!
