Quick & Easy Margarita CupcakesDirections:1 package reduced sugar yellow cake mix
    1 cup water
    1/3 cup vegetable oil
    3 large eggs
    2 tbsp tequila
Juice and grated peel of 2 small limes

    Icing and Rim
    - 1 container butter cream whipped icing
    - Juice of one small lime
    - 1 tbsp tequila
    - 2 tbsp confectioners sugar (powdered sugar)
    - Sea salt (coarse, not ground)
    - Course sugar (e.g. Sugar in the Raw, etc.)
    - Green food coloringDirections:

    1. Preheat oven to 350 degrees Fahrenheit.
    2. In a large mixing bowl, mix cake mix, water, eggs, oil, lime juice, grated lime peel, and tequila on medium speed with hand mixer for two minutes, until batter is smooth and thick.
    3. Spoon batter into cupcake cups until cups are 2/3 full. Bake for 20-22 minutes, or until toothpick inserted into center comes out clean. Allow to cool completely.
    4. In a seperate bowl, mix together icing, lime juice and tequila until well-mixed. Refridgerate for 2o-30 minutes, or until ready to use.
    5. In a small container, mix together sea salt and coarse sugar until desired flavor (BE SURE TO TASTE TEST!)(probably about 2 1/2 tbsp course sugar to 1/2 - 1 tbsp coarse salt). Add 2-3 drops of green food coloring, cover, and shake until sugar salt is uniform in color.
    6. To decorate, spoon a dollop of icing on top cupcake (about 1-2 tbsp) and smooth out to cover top. Roll edge (where paper ends and cupcake starts) in sugar salt, like a margarita glass rim. Refridgerate until ready to serve. Should make ~ 24 cupcakes.

FYI if the icing is a little runny add some icing sugar til it gets the right consistency.  And you don't HAVE to used reduced sugar cake mix...I've used regular golden cake mix and it works as well

ps. Little hint - only add 1 drop (maybe 2) of food coloring if you want your sugar-salt a pretty pale lime green. I prefer that to the dark green myself. :)

You can also add a drop or two to the icing to make the icing green as well:

Mmmmmm, me loves some cupcakes. :)

Wow, your cupcakes are beautiful!  Seriously, have you ever thought of going into business?  Cupcakes are serious money right now... my favorite cupcake store in DC just started a TV show with TLC!
