Beets

I made a beet salad tonight that was so good!  I boiled up some beets, peeled and cooled them.  Sliced them and sprinkled with a mix of garlic, salt, parsley, onion seasoning and then dalloped half with feta and half with goat cheese... so good and so easy!

How do you like to eat your beets?

  • The restaurant I used to work at had that exact salad! It was very popular. It also had artichoke hearts

    I roast the beets for my salad- they're easier to peel. Cooled, sliced beets, thinly sliced Vidalia or other sweet onion, coarse black pepper, dill, drizzled with balsamic vinegar and olive oil. I like to crumble Chevre or Andrulis Farmer's cheese on top.

    Or a good Borscht.  I don't have a great recipe- just finish everything in the fridge, a little parsnip, a little beef/pork, a little cabbage...  Make sure you have enough dill and you're good to go.

    Lol, we actually had beets for the first time ever this Christmas thanks to that quote - I bought my DH the BSG box set as a gift, and packaged it up with a bag of gummy bears and a can of beets (we're also Office fans). Well, I wasn't just going to throw the beets out, so we ate them - and liked them too!
