Irish / Celtic Engagement Ring Tradition

No, I am not talking about the Claddagh, at least - I don't think I am...

In my recent search for a engagement type ring for my fiance (male) I stumbled upon a wonderful tradition. I read vaguely that the Irish or Celtic tradition was to where a ring for both the soon-to-be groom and bride. A structure like what is mentioned in this passage: "The first engagement rings were crafted out of silver and gold and designed to include a ring that resembled a knot and could be separated to include two separate rings. This style of ring was believed to put more emphasis on symbolism then on elaborate ring settings." - http://www.gca-cma.org/love-knot-engagement-rings-symbolizing-the-meaning-of-marriage.htm
Does anyone else know of or has heard of this tradition? I would love to know more about it and possibly practice it in my own engagement?
