Ressypee help

I need something that can be made in an hour or less (prep time the day before is acceptable) and will feel 15 or so people. Any suggestions? I've already done taco soup, shepherds pie, and spaghetti.

  • Lasagna, chicken spaghetti, poppyseed chicken.  Chili is awesome but it may be too close to taco soup.

  • I came across this ressypee the other day. You should be able to put it together the day before, and it looks really easy and tasty. I'm considering making this tonight for dinner.

  • Christin, that actually looks amazing, but we just did taco soup last week, so I don't think I want to do mexican so soon. I'll definitely save it though. Does anybody have a good chicken spaghetti ressypee?

  • CHicken spaghetti for me is cooking the chicken in a skillet with the some sundried tomato infused olve oil, shredding it, adding it to my favorite jar sauce with some extra seasoning if I want and pouring it over pasta.

  • I have an eggplant casserole recipe that would feed that many if you doubled it. You would probably want to assemble it the day below and then just bake it the day of the event.
  • Buddha I've got a great one at home.  I think I have it from memory but I'm afraid I'll forget a vital ingredient.  I make it in huge batches and it freezes really well.

  • Oh yeah, I meant to say I would post it later.  I'm technically on vacation this week, but I suck at taking vacation so I'm here at a meeting.  I should be able to get it in a couple of hours.

  • Chicken Spaghetti1 large package spaghetti noodles (or two small)1 chicken or 4-6 chicken breasts, seasoned, boiled, and shredded1 Bell pepper (chopped)1 medium onion (chopped)1 large can sliced mushrooms1 can Rotel tomatoes1 can Cream of Mushroom Soup1 pound block Velveeta cheeseCook chicken in boiling water and reserve water to boil spaghetti in.  Boil slightly less time than on the package, you want it a little harder than al dente.  Drain your spaghetti (reserve 1 cup broth) and return it to the pot.  Add in the cup of broth, chicken chunks, bell pepper, onion, mushrooms, tomatoes, soup and cubed velveeta.  Stir and mix well.  Pour into casserole dish sprayed with Pam (I split this into a 9x13 pan and one slightly smaller rectangular pan) and bake at 325 for about 45 minutes, until cheese is bubbly.1 batch would probably be about right for 15 people if you have a salad or something with it.  I make double batches all the time and freeze them, though.  It's an easy recipe to double.

  • "block of velveeta" makes my heart pitter patter. I used to find it gross and then my Midwestern friend introduced me to things like macaroni and cheese casserole and frito pie, and I'm in love.

  • I'm nothing if not a Southern cook.  One of my favorite recipes involves a pound of cheddar cheese for a six to eight serving casserole.  And an entire bag of doritos.  But it's the best thing EVER.
