Diet/menu planning help needed please

So, it's finally happened.  My H looks at me last night and says "You know, all my pants seem kinda tight.  Maybe a diet come spring would be a good idea."

YAY!  it's so hard to diet when the other person in the house is not.  I need help though.  As many of you know, I have a difficult eater for a husband.  He doesn't like lots of things.  And by doesn't like, I mean he is so grossed out by that he looks nauseous.

cream cheese, sour cream, tomato not pureed, most veggies, most fruits (allergic) seafood, lettuce and beans other than green are all out. Along with probably a bunch of stuff I failed to mention.

Any low calorie/fat dinner recipes that you think a difficult eater will like?  We always have plenty of beef in the fridge. I'd just like a vqariety of recipes.  i hate diets that feel like you eat the same thing every day.

I already make better than normal versions of foods by substitution low-fat, whole grain, low sugar ingredients.  We need to kick that up a notch and do flat out healthy.

We're waiting for spring to officially start due to fresh produce prices
