Chicken recipe

I'm going to make burrito bowls with shredded chicken.  I'll do the chicken in the crock pot.  My normal go-to recipes for shredded chicken in the crock pot are either fairly bland or relatively labor intensive for crock pot stuff. 

Any suggestions for a good, easy shredded chicken in the crock pot that will be good in burrito bowls?

  • I use a homemade seasoning mix that tastes like those taco packets, but without crazy chemicals and sodium:

    I put a sliced onion at the bottom of the crock, then chicken breasts, then the spices (maybe a couple of teaspoons worth - I can check if you're interested), and then some slices jalepenos from the jar. Adding sliced bell peppers can make it more like fajita chicken. Sometimes I'll put a little of the jar juice in the crock to help get it started, sometimes some lime juice or chicken broth. Even a bit of water would probably work. The onion starts letting out enough liquid so that you don't need a ton additional.

  • I have used the skinnytaste sante fe chicken recipes for tacos. I imagine it would work good in a burrito bowl as well.

  • J&K, now I know what we'll be having for dinner!  Mmm, burrito bowls.

    The SkinnyTaste recipes are usually really tasty.  I haven't tried the carnitas one yet but it may have to be the on the menu for next week.

  • I'd make them with jalapeno, garlic, onion and honey. And cumin. Yum.

  • The Skinny Taste carnitas is really good.

    For chicken I put about a pound of boneless/skinless chicken breasts coated with a packet of reduced sodium taco seasoning in the crock pot then dump on top an entire jar of salsa.  Adjust spiciness by using hotter salsa.
