Afternoon Thread

We haven't had one of these in awhile!

Is everyone elses' day dragging like mine is? I keep looking at the clock and it's only moved a few minutes.

At least I've been productive today. and if one of my co workers doesn't stop using scented lotion I'm going to scream, you know I have allergies, you know I have migraines, I've asked you to stop, why do you continue to do it?!?! ok end rant.

  • Today is dragging a bit for me, too.

H and I have some chicken we need to use this week.  Anyone have a good (and easy) crock pot chicken recipe?

  • I just got out of a few meetings. Now it's lunch time - finally. I definitely am more hungry when I work out.

Today is dragging, for sure...and to make it worse, the rest of my day will be slow, which makes the time go so much slower.

  • Afternoon, everyone! I haven't had a chance to read the morning thread yet, so I'll just jump in here.

I had a physical this morning. Apparently I have an under active thyroid, which is news to me but explains some symptoms I've been having recently. My doctor wants me to start taking medication for it. Does anyone have personal experience with this too?

Brittany, I feel your pain about scented lotions, or scented anything, while at the office. It drives me crazy.

and my office doesn't have anything in print about it, so my boss won't do anything. blah!

  • lls- I also used chicken breasts.
    image
  • Britt that is really annoying. The hospital I will be working for sent me a form they want me to fill out and fax back. This is really annoying because I don't have Internet access at home except on the phone or a printer.

yep, and I already average 3-4 a week, and we haven't been able to find a medication to stop them. Also i'm super sensitive when it comes to scents and most trigger my headaches.

  • lls - THIS recipe is our go-to when we need a quick easy dinner.

But if you want simplest recipe in the world, just drop 2 frozen chicken breasts in the crock pot with a can of chicken broth and some seasoning (we love cajun). Cook on low for 8ish hours. We do that and then shread it to make tacos, sandwiches, salads, whatever. It's just an easy way to have chicken breasts ready when you get home.

It's kind of boring, but one of my easy favorites: 1 can diced potatoes, 1 can sliced carrots(drained), 1 can cream of chicken, and 1 or 2 chicken breasts. 5 hours on high or up to 8 on low.  We season our bowls individually (I'm garlic salt, he's pepper) and serve on a cup of rice, but some kind of noodle could be good too.

  • Edie - just make sure the outlet you use works. I've made that mistake before, when we first moved into an old apartment. Oooops!

  • Edie - You can buy ones with TIMERS. Both of mine have timers. Then they just switch to warm. It's PERFECT.
  • Hi! Saw the crockpot chicken and had to respond before I read everything. Thats what H and I just had for dinner.

Scented lotions trigger my migranes too, but I don't get them as often. Maybe 2 or 3 a week. I just don't get it, do people not realise how strong stuff is? Even if it didn't give me headaches, I wouldn't want to smell like the spot in the mall directly in front of B&BW or abercrombie.

Edie, I stayed home with mine the first day, but I trust it now. We have a super tiny one, I think it's  2 quarts. It has absolutely saved our dinner-eating lives. It fixes just enough for the two of us, so instead of trimming recipes, I like to fix half immediately and freeze the rest to throw in another day.

  • Buzz - what do you need to know re thyroid?  I am hypo and take l-thyroxine.  I have been hypo my entire life.  You can PM me if you want.

<div>Thank you!  This sounds pretty delicious too!</div><div>
</div><div>My usual crock pot chicken consists of 2 or 3 breasts in broth with some spices - and I usually add potatoes also.  I'll have to try it with cajun seasoning next time!</div>
