Or stuffed peppers are easy and fun. Cut them in half, remove the seeds and fill with almost anything. Sometimes I do crab salad and i have also done raw veggies like cauliflower, broccoli and carrots. Guacamole and tortilla chips? Pinwheels with prosciutto, melon and mozzarella? Focaccia with sun dried tomato spread? Stuffed mushrooms?

  • Ramen noodle salad is always a big hit. 

    Salad

    2 Packages Ramen Oriental Noodles
    1 Bag Coleslaw Mix
    1 cup Sunflower Seeds
    1 cup Slivered Sauteed Almonds

    Dressing

    ½ cup Sugar
    1 cup Vegetable Oil
    1/3 cup Vinegar
    2 packs of Seasoned Flavoring fro Raman Noodles

    Directions:
    Saute Almonds until golden brown, crush noodles while still in package and then add all of the Salad ingredients to a large bowl. Mix seasoning packs and sugar until well blended then add oil, microwave til hot (about 3-5 minute) stirring frequently. When it's still hot add the vinegar while stirring. The vinegar will dissolve the rest of the sugar. I usually add a little bit more vinegar because I like it tangier.
