Snarky Brides

Desserts

FI and I are going to a cook-out get together (burgers/hotdogs) tomorrow with some old friends and their husbands.  I've been asked to bring a dessert.  I'm not usually a dessert person, so I'm stumped.  I am not a great baker, but I've got the tools and I can make it work.

What are your good ideas for what to bring?  There will be 8 of us.  It'll be about 100 degrees and we'll be grilling, so I'm thinking something not too heavy.

  • 100 degrees... damn.  Nothing that will melt, then?  Like no frostings or summer salads or anything.

    Then again a fruit pizza would be so refreshing.

    If you're not afraid to try baking something, lemon bars are awesome!

  • I would buy a cookies/brownies platter from grocery store.
  • My go-to dessert is ricotta pie, although you might think it's too heavy.

  • Fruit salad with a zest of lemon :)  Chill it in the fridge before disembarking for your event.

    Grilled pinapple!  And peaches.  Easy peasy.  Just have them choppped and get them thrown on the grill.

  • Dessert, my favorite. I've made this amazing Blueberry no bake cheesecake. Let me see if I can find the recipe.

  • Snickers salad is pretty much chopped up snickers bars, chopped up apples (and whatever other fruit you want, oranges and bananas and pineapple are all yummy in it) and Cool Whip mixed together.  It sounds weird and boring, but it's super delicious and it's light and easy.

  • I've made a really good alternative to banana pudding called banana cream supreme. It's so super easy to make and very light. :o) I can send you the recipe if you'd like.

    Pre-heat oven to 350

    In a large mixing bowl, blend the following with a mixer:

    3 pounds whole milk rocotta
    6 jumbo eggs
    2 Tsp vanilla OR almond extract (whichever you prefer)
    1.5 cups sugar
    6 Tbsp flour

    Pour mixture into a greased (Pam works very well) disposable lasagna pan. Sprinkle the top with cinnamon. Bake at 350 for one hour. <strong>Turn oven off and leave pie in oven </strong>for one hour (Pie will be in oven for 2 hours total).

    Cool on wire rack for about 2 hours before serviing.

    You can make this a few days ahead of time and keep it covered in the fridge.

    So, Jen, it makes its own crust?  Or it's crustless like a lasagna?

    Here you go. :o) It's a PC recipe, so it calls for some PC specific items, but of course, you can just buy graham cracker crumbs instead of chopping your own (that's what I do at least!) and use a regular spatula instead of a skinny scraper, etc.

    You also don't have to use a springform pan, whenever I'm being lazy, I just make it in a glass dish and people just scoop it out instead of it being cut into wedges. Or you could definitely use a pie pan and just make the crust go up the sides of the pan instead of just on the bottom like you would with the springform.

    1 1/4 cups chopped graham cracker squares
    1/4 cup butter, melted
    3 tablespoons granulated sugar
    1 cup sour cream
    1/2 cup cold milk
    1 (3.4 ounce) box vanilla instant pudding and pie filling
    1 (12 ounce) container frozen whipped topping, thawed
    3 medium bananas, sliced
    2 tablespoons pecans, grated

    Chop graham crackers using Food Chopper. Place in 1 quart Batter Bowl. Add butter and sugar; mix well with Skinny Scraper. Press crumb mixture onto flat bottom of Springform Pan.

    In Classic 2 quart Batter Bowl, whisk sour cream and milk using 10-inch Whisk until blended. Add pudding mix; whisk until pudding is dissolved. Add whipped topping, mixing until well blended. Spread half of filling over crust.

    Slice bananas using Egg Slicer Plus; arrange over filling. Spread remaining filling over bananas. Grate pecans over top using Deluxe Cheese Grater. Garnish as desired with fresh fruit/mint leaves.

    To serve, remove collar from pan; cut into 12 wedges.

    Yield: 12 servings

    <em>Edit:</em> I also make a strawberry sauce to drizzle over top using the leftover strawberries (I use strawberries to garnish) from the recipe, about a 1/2 c. sugar and about 1 cup water. Just boil it until the strawberries are fully cooked and it's the consistency that you'd like and then blend it in the blender to break up the remaining strawberry peices.

    It's also really good with french vanilla pudding mix instead of vanilla. </p></div></div>

    Oh it is. I like it much better than banana pudding. So everytime I can make it, I do. Usually banana pudding is a given at cookouts in NC.

    It makes it's own crust. Super easy.

    I'm actually making one this weekend for a party. I'm going to use the almond extract and put toasted almonds on the bottom of the pan and pour the mix on top. I've never tried it like that before, but I think it should be alright.

  • Key Lime Pie is my favorite summer dessert, especially because it is SO FREAKING EASY!!!  Seriously, takes like no time at all to make and everyone I serve it to is wicked impressed!

    Ingredients

     

    • Graham cracker crust (store bought, I buy the bigger one that has 2 extra servings since this makes enough filling for it).
    • 2 (14-ounce) cans sweetened condensed milk
    • 1 cup key lime or regular lime juice
    • 2 whole eggs

     

    Directions

    Preheat the oven to 325 degrees F.

     

    In a separate bowl, combine the condensed milk, lime juice, and eggs. Whisk until well blended and place the filling in the graham cracker crust. Bake in the oven for 15 minutes and allow to chill in the refrigerator for at least 2 hours.


    Or, if you don't feel like baking, I agree, grilled peaches are awesome!  We serve them with caramel sauce and vanilla ice cream.  What a great dessert!

    I guess I've never been to a BBQ where they haven't used the grill? That seems odd to me..
    I've heard of grill out too, that also seems odd.
