Any ideas?

I need to find something to make for dinner tonight, but FMIL is lactose intolerant. Does anyone know any good lactose free recipes? I'm not having much luck finding anything good, so far.

    Whole wheat pasta, with eggplant cutlets (from Trader Joe's) topped off with either pesto sauce or garlic marinara sauce, and a side of steamed vegetables :)

    That's what we are having tonight :)

  • I'm open with meat suggestions, except for fish. Neither FI or us really like fish (although shrimp is good).

    There's not a recipe persay, their eggplant cutlets are in the frozen section (which is similar to the one at olive garden (um... eggplant parmesean).

    It depends how many people you'll have over, or if you want left overs.

    <strong>- Whole wheat pasta </strong>
    - it could be angel hair, fuscilli (the curly ones), or even fettucini (the wider spagettis) - you could make the whole package for how many servings you need
    - boil water, add a tablespoon of olive oil, and a pinch of salt, add pasta.  Wait to empty the pasta when it's ala dente, easy to bite.
    - once out, if you have any spagetti seasoning, toss with the pasta, with a little bit of olive oil. 

    <strong>Eggplant Cutlets</strong>
    - bake in your toaster oven for 10 minutes.  If you have an olive oil spray, spray on one side, and flip at the 10 minute mark -- I think at 350°F

    <strong>Garlic Marinara Sauce
    </strong>- either you can make it from scratch, or if you don't have time, Trader Joes has this as well, and it's delicious
    - if making from scratch, here goes.
    - chop up some garlic, and onions (this could be purple ones)
    - add a little bit of oil in a sauce pan (maybe 1 tablespoon)
    - when the oil is hot, add the garlic and onions, and saute.
    - chop up tomatoes - the vine ripe ones or roma, or whatever you have
    - add it to the mix, and add a little bit of basil, thyme, and cover for 10 minutes when the tomatoes start melting. Lower the heat.

    <strong>Steamed veggies
    </strong>- asparagus, brocolli, carrots, green beans, yellow zuchinni, sugar snap peas
    - put in your steamer, or with a holey tray in your pressure cooker.
    - carrots take the longest - about 10 minutes
    - yellow zuchinni takes about 5 minutes
    - all of the green vegetables take less than 3 if you want them crunchy, just enough to stick a fork in them.

    - season with black pepper and a little bit of salt. refrain from the butter, or margerine, it starts adding to the sogginess...

    Most of these things you can get at the regular grocery store, except for the eggplant cutlets (at Trader Joes, and you can find all of these products at Trader Joe's for your one stop shopping)

    Else you can raid our fridge :)

    Here's a quick and easy meal DH and I make a lot. We usually serve this with Brown Rice.

    Cilantro-Lime Chicken with Avocado Salsa
    Yield:
    4 servings (serving size: 1 chicken breast half and about 1/4 cup salsa)

    Ingredients

    • Chicken:
    • 2  tablespoons  minced fresh cilantro
    • 2 1/2  tablespoons  fresh lime juice
    • 1 1/2  tablespoons  olive oil
    • 4  (6-ounce) skinless, boneless chicken breast halves
    • 1/4  teaspoon  salt
    • Cooking spray

    • Salsa:
    • 1  cup  chopped plum tomato (about 2)
    • 2  tablespoons  finely chopped onion
    • 2  teaspoons  fresh lime juice
    • 1/4  teaspoon  salt
    • 1/8  teaspoon  freshly ground black pepper
    • 1  avocado, peeled and finely chopped

    Preparation

    1. To prepare chicken, combine first 4 ingredients in a large bowl; toss and let stand 3 minutes. Remove chicken from marinade; discard marinade. Sprinkle chicken evenly with 1/4 teaspoon salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 6 minutes on each side or until done.

    2. To prepare salsa, combine tomato and next 4 ingredients (through pepper) in a medium bowl. Add avocado; stir gently to combine. Serve salsa over chicken.

  • You can buy lactose free milk at the store right alongside the regular milk, if there's a certain recipe you want to make that calls for milk. It won't mess up the recipe or anything. I'm lactose intolerant too, and so is H and both my parents so I know these things haha :D If FMIL is severley LI, you might want to avoid butter and chocolate too. They don't bother me in small quantities but I had a friend in college who couldn't tolerate ANY of it.

  • I'm also lactose intolerant but I'm a bad girl and usually eat it anyway (and chase it with lactaid pills).  So I'm no help.

    Wait, this is lactose-free.  We have stir fry a lot.  Chicken or beef (whatever's on sale), season the wok with sesame oil and cook the meat through.  Add fresh or frozen veggies and cook until crisp-tender.  Season with teriaki or soy sauce.

    Last night we put a spin on it and made a Thai peanut sauce.  We mixed half a can of chicken broth with a tablespoon of peanut butter and tossed the stir fry and lo mein noodles in it (we use linguine for lo mein, that's how we roll). 
  • I'm not lactose intolerant, but choose to drink unsweetened soymilk/ricemilk/almond milk.

    The unsweetened (less than 2g of sugar) version of the above products make a one for one substitute for whatever you are going to make with milk - like cakes, or alfredo sauce :)

  • Ditto Heels.  I kind of just ignore my lactose intolerance.  My go to meal without dairy is sweet and sour chicken with a side of rice.

    FTR, I recently saw an article about a study regarding lactose intolerance and milk chocolate.  Lactose intolerant people should have no problem digesting milk chocolate because the heat in the chocolate making process denatures the lactose protein.  I've never had a problem with chocolate.

I'm so lucky that the girls I speak to on theknot are nothing like you...I would've never come on here for ADVICE if I would've encountered a big a bitch as you. I genuinely feel awful for your children or your future children, and I think it would be irresponsible of YOU not to invest in their future therapy sessions starting now.   • I haven't either, come to think of it.  It never occurred to me that milk chocolate had milk in it.  Dur. 

    The only thing I straight up cannot have is a glass of milk.  I can eat a whole box of lactaid after and I'm still going to wish I was dead. 
  • Most of our meals are lactose free, but not by design. We often eat grilled chicken or steak with grilled veggies (zucchini, green onions, portabellas, etc). You can also go mediterranean without the feta cheese, and make tabbouleh (recipe in my blog) to go with some lemon grilled chicken.

  • Heels- I'm jealous that lactaid works for you.  It doesn't do anything for me :(  I consume dairy knowing full well I'm in for a world of hurt a couple of hours down the line.

    Also, thank you for all of the extra info on lactose intolerance. I learned some things.

    Unfortuantely, I don't think the pills work that well for FMIL, either, so I'd probably do best to just avoid those foods.

  • I've heard a lot of people say that, Betrothed, and it makes me sad.  I must have a pretty mild case.  My mom and sister aren't helped by lactaid either.  Even if it didn't work, though, I would still eat ice cream.  Any pain is worth it. 
  • Lactaid pills work for me to an extent. I could never drink a glass of milk, or drink a blended coffee beverage from a Starbucks-like place. Not even with a Lactaid. I also can't eat pizza. If I take a Lactaid I can have a piece or two of cheese on my sandwich, or even a bit of ice cream (like, a few tablespoons haha). And I can tolerate a normal-sized serving of most baked goods that have milk in them. Yogurt doesn't bother me no matter if I take Lactaid or not though.

    That's weird about the milk chocolate though -- my friend got violently ill if she had it. Like in the bathroom all evening kind of ill with lots of cramping and stuff. />__<

  • This is my favorite recipe EVER. It has tofu, but you could easily substitute chicken. So awesome, healthy, and has gotten rave reviews at multiple dinner parties!

    I double the sauce, skip the grated carrot, and add broccoli.

  • I pretty much ignore my lactose intolerance too.  Cheese and milk products taste just too damn good to avoid.  Bryers makes a lactose free vanilla ice cream that tastes good and doesn't make me hate myself as much as regular ice cream. 

    Dito Heels on the stir-fry suggestion and Betrothed on grilled foods.  We eat a lot of meat and 2 veggies meals.  You can make a ton of things without milk.  Tomato based sauces are generally safe if you want to go that route, as long as cheese isn't already mixed in.
