    I'm not meal planning exactly, but I recently made chicken rollatini (clicky) from Skinny Taste and my whole family raved about it.  And, it's super easy.  I also love the ground turkey stuffed peppers from Skinny Taste.

    Another go-to meal for me is baked honey nut chicken (clicky) Again, easy and super yummy.

    moi!  i'm making up my list right now and then heading out to the market.

    *Grilled BBQ chicken breasts, steamed broccoli

    *Grilled sirloins, sauteed mushrooms in w. wine and balsamic, roasted herb carrots

    *Roasted chicken, so bad yet so good potatoes http://pinterest.com/pin/104849497544889446/

    *pan fried pork chops, asparagus, grilled corn on the cob

    *Grilled lemon-herb chicken, roasted garlic cauliflower

    *bologna, mushroom, & peppers stir fry

    That's as far as I've gotten

  • My meal plans go along the lines of -

    Monday, I think I'll get sushi

    Tuesday, I think I'll get a hoagie from Primo

    Wednesday, I think I'll see what Mom's making

    Thursday, I think I'll eat a box of Lucky Charms

    Ugh. I need to learn to cook before FI and I move in together or he's probably going to call off the wedding, haha.

    Angel, I was like that when I lived alone.  I hated cooking for just myself. Partly out of laziness, and partly out of the fact that I was (probably irrationally) paranoid about undercooking meat, and like to have someone to double check it for me to make sure it's done.   But when I moved in with H, I started to love cooking and actually got pretty good at it.

  • I'm trying to think of stuff right now. That spinach and cheese tortellini bake I made the other day was fantastic, I  just put a little too much cayenne pepper in it, so I kind of want to try it again with a little less spice. Other than that, I have no idea yet. Trying to find healthier, veggie based dishes that I won't hate.

    Any what kind of veggies do you like? I like to make chicken or shrimp stir fry with veggies. I usually do baby corn, boy chok, bell peppers, mushrooms, onion, and carrots.  Just throw it all in a wok with a bit of oil and add some low sodium soy sauce or whatever kind of sauce you want.  I usually serve it over brown rice. 

    ETA: basically this recipe but I change/add whatever veggies I feel like. I do not like edamame, so I don't use it.  I also just cook brown rice separately rather than using precooked rice like it says.

  • No clue what we'll be having. Whatever we buy that night, I guess. Usually I plan the week before but work was so crazy for the both of us that we jjust never got around to it.

    Angel, I didn't cook much before moving in with H either. It's boring cooking for just one (for me, anyway), so I just did simple stuff. Now I enjoy cooking and I get a little ego boost whenever something turns out awesome and H loves it. Luckily, he's easy to please.

  • Any, can you post the spinach and cheese tortelli bake please.   That sounds like something I could make in the morning and have FI pop into the oven an hour before I get home.  Thanks.

  • ANy, do you eat mushrooms? Those are great and versatile as a meat subsitute. Imade some stuffed Portobellos the other day that were awesome. Let me find the recipe for you.

  • Oh, and we will probably have sauteed chicken salads for dinner all week. And I'll have them for lunch too. And I'll have basic veggie salad for breakfast. We are leaving for NOLA on friday so this is a last ditch effort to not look bad in pictures. I know there is no way I can eat as healthy there as I can here. But I'm more worried about feeding the kid. He eats lots of fresh stuff, and I don't think our hotel has a fridge. There is a farmers market near the french market, but it could be tough to not let him have crap while we are there.

  • Angel, I get almost all of my recipes from Women's World andd First magazines. They are always really simple and super tasty, and usually pretty healthy. I also like the Taste of Home magazine, especiallly their 5-ingredient recipes.
  • I've got most of my mains figured out but am still working on my sides. 

    Tonight - beef roast with sweedish baked poatoes
    Sunday - Fix it your self
    Monday - This pork tenderloin
    Tuesday - This korean beef with brown rice
    Wednesday - I'm out with friends so FI is fending for himself
    Thursday - FI's night to cook
    Friday - Baked pasta with italian Sausage
    Saturday - Chicken dijon drumsticks

  • Sarah, now I want to make your portebello mushroom with fresh kale.  We have been using kale in the juicer, but I had not thought about eating it like you suggested. 

    Any, I put the recipe link you shared in my pin collection of food I love and it has already been pinned over 28 times.

  • Ski, it really is good. I love sauteed kale, and kale chips, but I don't think I could drink it. ::shudder::

    And portobellas are so meaty, it really has the mouth feel of a steak or something that heavy. THey are also good marinated (shortly) in some italian dressing, grilled and put on a bun like a hamburger. Sprinkle with some parmesan and it is YUMMY!

    Oh, I'm meal planning right now. How convenient.

    We're having:
    Creamy chicken and mushrooms from my Crockpot cookbook with a salad
    Sweet and Tangy Chicken from my brain, and green beans in a soy sauce
    Tomato, basil, and cheese baked pasta from a Rachael Ray cookbook with a salad
    Any's Tortellini bake looks delicious, so we can do that with French bread
    Skinny Texas Cheese Fries, for a not so healthy but fun meal.

    We live on leftovers a lot, at least I do.  My FI tends to forget about them so there are weeks where I eat the same meal 4-5 times.  This week, on Sunday I'm making salmon, Wednesday FI is making sesame crusted chicken.  Both are recipes off skinnytaste (salmon) (chicken).  I'll probably make myself pasta on Tuesday night  since FI will be on campus studying for his final on Wednesday morning.  Lunch will be lots of salads.  Breakfast is a great unknown.

    Tonight: ?
    Sunday: Salmon
    Monday: leftover salmon
    Tuesday: pasta
    Wednesday: Chicken
    Thursday: leftover chicken
    Friday: FMIL feeds us

    ETA: tonight we're having yet another skinnytaste recipe.  Lavash Flatbread Pizza. (clicky)

    I have some pierogies in the freezer that I'm going to make for supper.  That's the end of the last batch that I made, will have to make more in a few weeks.

    Tomorrow is stuffed peppers and mashed potatos

    Monday- FI has golf so I'll prob just eat cereal or something

    Tuesday I work until 8 so he's on his own

    Wed - we do our grocery shopping and eat out, so I'll come up with the plan for the rest of the week once I see the ad's in the paper tomorrow.

    Oooh FI and I have a fabulosu zuppa recipe! And I LOVE how much grilling you do...we are the same way. I had never had grilled corn until I moved in with FI and now I will never go back.
