Dinner ideas

Sorry to be a PW.

T's mom invited us to T's sister's house for dinner tomorrow and asked if I'd like to cook (since his sister doesn't and I guess I like to..). Well, I always only cook for T and he just like plain 'ole chicken.
I'm at a loss as to what to make. I was going to do oven fried chicken with mashed potatoes and corn but T is not excited about that.

T's sisters a veg. but will eat chicken.
T will not eat anything that could be "weird" or green or a vegetable or fish.
I will not cook chicken on the stove top, I only bake chicken.
I'm leaning towards some kind of chicken still, or pasta.

Suggestions/ recipes?

I love cereal. It's my favorite.
T's sister hates milk though and if she eats cereal she eats it with water (ick!). I hate milk too but I still use it to moisten my cereal.

This is a hard crew.

I like making chicken parm or pepper lime chicken for other people. 

Pepper Lime Chicken:

Marinate chicken breasts in lime juice sprinkled with pepper (to taste).

Bake or broil chicken breasts, basting with lime juice/pepper.

When chicken is almost done, sprinkle Mexican cheese (Jack, whatever) and diced tomatoes on the top.  Bake until cheese is melted. 

If this is too weird for T, you can leave off the cheese and tomatoes--it's just as good without.

I serve with yellow rice and corn on the cob.

You should definitely do a fiesta lime chicken of some sort, with spanish rice.

No recipes though.  I can barely make toast.

I would do a chicken teriyaki bowl type thing. Cook up some rice and veggies and cut up some chicken and KABLAM. Im sure it more complicated then that but im with AATB, I cant cook a poptart.

The stir fry is a good idea! I don't like teriyaki but I could omit it for myself.

I considered chicken parm. Lime chicken sounds good too...cheese is ok with T, just not tomatoes.

last night FILs came over and I made these with pasta...CLICKY

I also made a salad of layered buffalo mozzarella, tomatoes, and basil with oil and balsamic vinaigrette drizzled on it. And garlic bread.

A vegetarian that eats chicken? Can you do that?

I think stir fry sounds easy and univerally pleasing.

Or lemon pepper chicken.  That would be easy too.

Chicken parm is always a crowd pleaser. 

I bread the chicken and mix grated parmesean into the bread crumbs to give it more flavor.  Then I fry them, then bake in sauce with mozz on top.

Number- that looks/ sounds amazing! T wont eat cream cheese (gah!) but I could make him one without the filling!

yeah, it would totally work, it would take a little longer to cook through, thats all. It was good, and because they were baked they weren't greasy at all. Buy twice as much pasta sauce so that there is enough for the pasta. They said it was delicious.

oh, and they are super easy to make...Roxy if you end up doing them tell me what you think tomorrow...:)
