What is scalloped corn?  Why don't I have your recipe for it?  WHY HAVE I NEVER HEARD OF IT BEFORE?!?!  I loved scalloped potatoes...is it similar?

    SCALLOPED CORN
     
    1 PKG FROZEN WHOLE KERNEL CORN, COOKED AND DRAINED OR 1 CAN (16) OZ WHOLE KERNEL CORN, DRAINED.  I ALWAYS HAVE USED THE CANNED CORN.
    1 SMALL ONION, CHOPPED (ABOUT 1/4 CUP)
    1/2 SMALL GREEN PEPPER, CHOPPED
    2 TABLESPOONS MARGARINE OR BUTTER
    2 T. FLOUR
    1 TEASPOON SALT
    1/2 TEASPOON PAPRIKA
    1/4 TEASPOON DRY MUSTARD
    DASH OF PEPPER
    1/4 CUP MILK
    1 EGG, SLIGHtLY BEATEN
    1/3 CUP CRACKER CRUMBS
    1 T. MARGARINE OR BUTTER, MELTED
     
    Cook and stir onion and green pepper in 2 T.butter until onion is tender, remove from heat.  Sit in flour, salt, paprika, mustard, & pepper.  Cook over low heat, stirrring constantly, until mixture is bubbly, remove from heat.  Stir in milk gradually.  Heat to boiling, stirring constantly.  Boil and stir 1 minute.  Stir in corn and egg.  Pour into ungreased 1 qt casserole.
    Mix crumbs and 1 T. melted butter, sprinkle over corn.  Cook uncovered in 350 degree oven till bubble, 30 to 35 min.  Makes 4 servings

  • Hey roxy.. i made it twice.  1st time as directed and the second time I used panko bread crumbs with a pinch of salt added and it tasted delicious!  Just as good.  i was out of crackers  :)
