What's for Dinner?

I was craving Au Gratin potatoes...Betty Corcker didn't let me down.  Now I'm getting ready to have one of the chocolate cupcakes DD made today.

I'm supposed to be eating better, but I think PMS outranks diet food.

What are y'all having for sups.

  • I will probably have more plain rice and then maybe some cinnamon toast if my stomach feels up to it. Woo! I'm pmsing too which makes the fact that I can't have any chocolate even worse. Hah.

  • I am eating as I type this.

    I made some marinated pork skewers and quinoa which I used to soak up some reserved marinade. Both are pretty good but not amazing. I also made a salad of cucumbers, mint and feta and it's pretty delicious.

    I'm having fun experimenting with new recipes while FH is away. I'm also planning on eating a lot of the things he doens't like. I'm actually looking forward to meal planning and shopping this weekend.

    cubed and sauted pork chops with onions and teryaki sauce, basmati rice and broccoli. It was delish!
  • We had BC's au gratin potatoes on Sunday.  I don't even like potatoes but I love those things. 


    No clue for tonight.  A coworker just told me about last night's Fear Factor and I suddenly felt like Musu does.

    I can never get my pork chops to come out not-tough. I try not to overcook them, but whatever I do, they end up really tough.
  • I hope to feel better tomorrow! I usually do a combo of cinnamon and sugar with a bit of margarine or butter too, Lizzie. I might put as little butter as possible though since fat isn't good for me right now. But there really isn't anyway to keep the cinnamon to stick on the toast otherwise, haha.

    Do you use a meat thermometer when you cook pork chops?  I finally gave in and started using one and it's made all the difference.

    Ive never used a meat thermometer for pork chops, I can sorta eyeball it and go by feel.

  • I'm making fajitas for dinner. I'm quite excited. I'm also drinking a very large drink right now as well.
  • I can do that with steaks Nebb but my fear of undercooked pork (chicken too) tends to override any instinct I have.

  • Girlie, I do use one, maybe I'm just letting them get to too high of a temp? Nebb, if I manage to screw it up with the meat thermometer, I'm not sure I could eyeball it too well either. Maybe I'm just using cheap crappy meat? I dunno, but I almost never cook them because of this.

  • Lizzie, I don't know why it never occured to me to try marinating them. I'll have to try that and maybe cook them slower and see if that helps. Girlie I'm the same way about being paranoid with chicken and pork.

  • I'm still at work, eating a maple bacon cupcake.  It is absolutely amazing - it tastes like a giant plate of pancakes and bacon.  I will have wine when I get home (hoping to be leaving reasonably soon).

    Cinnamon toast sounds delicious, but I don't have any bread. Boo!

    I think I'm just going to make some pasta or mac and cheese. I've been eating pizza for two days because I've been craving it, but I think H is going to put his foot down tonight! 

    Or a burrito. I should probably use the tortillas in the fridge before they go bad.

    Nicole- I'm teh same way. I have one recipe that I can cook pork chops in:

    on medium, sear the chops quickly (just a few minutes on each side)
    then add in 1 C ketchup, 1 C beer, and a TBL or so of brown sugar. Mix it all up and let simmer for like 10-15 minutes (flipping the pork chops half way through.)  delicious. The sauce will thicken and can be served over egg noodles or whatever else.

    I was just going to say this. I always sear pork chops. Locks in the juices. And remember it's now "okay" to only cook pork to 145 degrees.

    For us we did seasoned grilled chicken, grilled zuchini and a caesar salad. Super easy & cheap tonight. I miss the all-inclusive deliciousness of our HM real bad right now though. It was soooooo good. :(

    My FAVOURITE way to do pork chops? chop them up and saute them and let the pan get quite dark with the brown bits, then once its a nice and rich brown you dump in a can of mushroom soup. let it simmer for about 5-7 minutes and then eat on rice with vegetables. It tastes soooooooooo good. Its the brown bits that really gives it the flavour.

    Thanks all, I'll definitely give that recipe a shot Steph. Now I just want cheese curds. (ERMAHGERD, CHERSE KERDS!!)

    ETA: Nebb that recipe sounds really good too, I love cream of mushroom soup with pork chops and it sounds really easy to do it that way.
