At a conference recently, I was served a buffet with a potato bar and it was really good! They took a martini glass and put a scoop of potato in it. You could choose Yukon gold, sweet, or red potatoes. Then, there were a selection of toppings such as cinnamon, brown sugar, marshmallows, scallions, garlic, bacon, cheese, ranch, sour cream, tomatoes, etc. I'm thinking about incorporating this into our plans.
