Gluten Free Vegan Cake

For our reception we're having individual cakes as centerpiece cakes.  We chose to do this because we have two couples that are vegan and one that has celiac and cannot have gluten.  We are seating them all at the same table so that they can have a cake for their dietary needs.I'm having a baker make the other cakes and I will be making the cake for this table because I just don't trust that it won't get cross-contaminated, etc.  I saw a post on here to use Pamela's cake mix for the GF, but what icing?  Are there restrictions on the icing?  I need a vegan buttercream so that it looks like the other cakes. Does anyone have any recipes?  Ideas...HELP!

    There are a few ways to go about this...Betty Crocker now makes a Gluten Free cake mix that from what people have told me is pretty good (I'm allergic to something in GF mixes so can't have it myself)...  Nameste' brand is also another GREAT brand for GF...As for the frosting, YES!!, there are restrictions for GF because of wheat being used for the alcohol in most flavorings.  McCormik is the brand to use for the flavoring because of the alcohol they use in their extracts...  The way to make it GF and vegan (assuming your vegans are true vegans and won't do dairy or eggs) is just leave them out of the mix.  It'll be a bit drier for a challenge but it works.  Also, if they're true vegans and not simply vegetarians, use all shortening for the icing.

    You may be able to use applesauce as a replacement for the eggs or dairy.  I'd try it in advance, just in case.

    Experiment with applesauce, tofu, or egg substitute (there's one called energy egg replacer). Vegan cakes aren't that hard. A lot of frosting is vegan, just make sure there's no gelatin and it's gluten-free.

    Cherry Brooks Farms has a frosting mix that might work. You are also free to email me at thereisno_try-at-yahoo-com and I will look up some recipes for you. I am vegan and GF and I think it is absolutely wonderful that you are doing this for your guests. The only time I get cake is if I bring my own!! BTW, there is a gluten free bakery in Phoenix Arizona. They ship cake blanks but they do contain eggs. They might have a frosting mix too... www.glutenfreecreations.com.
