Custom Cake and desserts - Charlotte Cake

Hi everyone, 

I have a very hard time finding a caterer that actually serves or is willing to serve what I would like to have at the wedding. One thing that I do not want to make a compromise is the charlotte cake. It seems like no one is willing to make one. 

How have your experiences been with customizing your food?

It could be a number of issues. Can you provide a recipe? Maybe they can't order all of the ingrediants from thier supplyers. Maybe the cake (I've never heard of charlotte cake so I don't know anything about it) is too labor intensive for the cost. I would ask point blank what the issue is if it's something you really want. Also maybe check to see if you could make it yourself.

I agree with PPs.  The only way you'll know what can and cannot be done is to ask more specific questions.  In googling your cake, my guess would be that this is a very labor intensive recipe that would require a lot of last minute work - all the fresh fruit and the creme may not be able to be made and prepped ahead of time - that will not scale well to a wedding reception.

You may need to think about alternate ways to incorporate this cake - such as having a smaller one at your rehearsal dinner or ordering a cake for you and your SO to enjoy alone, after the ceremony.  For your reception, you might need to think about something charlotte-like, such as a vanilla cake with strawberry filling or strawberry cake with buttercream or perhaps serving lady fingers with ice cream.
