We are having our reception start at 5... there will be a open bar (beer/wine) from 5-10. Our reception will be more of a "cocktail reception" with heavy hors d'ouevres. No set time on eating - anytime between 6 and 8/9. People can eat as they please. Except for intros, dances, cake there will be no set timeline. More of a party the entire time.
While the menu might seem random it was built around the types of foods we like, the date (cinco de mayo -although it is NOT a theme wedding), and our backgrounds.
From 5-6 - Pass hors D'ouevres
-Mozzarella & Tomato Kabobs(skewered with country bread croutons and fresh basil - drizzled w olive oil)
-Mini chicken and cheese quesadilla(mini tortilla round topped with grilled chicken, roasted red peppers, jack/cheddar cheese, served with fresh salsa, guacomole, and sour cream)
-NC BBQ Mini Sandwiches
Displays from 6-8
-Garden grilled vegetables (variety served with roasted red pepper sauce)
-NC Local Cheese Table(display that will also be adorned with fresh and dried fruits, crostini and crackers)
-Fresh Fruit Display (variety to be skewered and with key lime dipping sauce)
-Flank Steak with mini rolls and sauces(beef flank stank marinated in special marinade and then grilled)
-Guacomole Bar(attendant will make fresh guacomole as people wish - served with 4 different types of salsa, sour cream, cheddar cheese, black beans, queso dip, and chips)
-Pork and Green Chili Meatballs
Pasta Station
Pasta made to order(penne or ravioli, 2 types of sauce, add ins, and parmesan cheese)
Thoughts?? According to catering company it is a popular option and people can eat when and how much they please. I am going back and forth now between this and buffet option.
