Baker or DIY-Cake

I have been pondering this question for awhile now...how many of you have made your own cake/cupcakes and how did it go?  I was thinking about having my aunt do the top tier of the "cake" and then making the cupcakes or the cake push-ups myself.  What are your ideas?

  • Have you checked with your caterer and venue to make sure they allow food to be brought in from an outside source that is not a licensed kitchen?  There are many venues who do allow this but there are also MANY who do not.
  • We are having the reception in my MIL field...she owns 5 acres of open field, and we will be having a rather large wedding (400 people) so the venue isn't really an issue :)

  • That's good.  A few years ago a knottie never checked into that and when g'ma showed up with a homemade wedding cake the venue refused to let it in because it was from an unlicensed kitchen.  Talk about leftovers!

    I'm a hobby baker, not a pro, but my first question for you is the logistics.  Do you have a place to make 400 cupcakes and store them?  That is a major task right before your wedding.

    Have you checked Sam's club or Costco?  You can get a ton of cupcakes for a great price and then you wouldn't have to worry about the logistics.
  • Making 400+ cupcakes is a BIG deal. That's a lot of work. I used to work in catering and that's the kind of stuff my nightmares were made of...and I was using commercial grade ovens and mixers.

    My advice would be to search around for an affordable vendor.

  • Maybe you can hire someone from a local culinary school, or search around Craigslist for someone because that is WAY too much for you to do on your own before your wedding.
