Vegetarian entree ideas

Looking for ideas for vegetarian entrees... I myself am vegetarian, but I am absolutely stumped here. We'll have a max of 10 people eating vegetarian, but the caterer has told me that they can make whatever I want. Our sides are garlic mashed potatoes and a grilled veggie medley. The only options they suggest are pastas or cheese enchiladas, none of which go with our sides. I know that most of the other folks eating vegetarian with me won't eat tofu, so I'm stuck. Thank you for any suggestions!

    What about a veggie pasta, but then don't serve them the potatoes?  The pasta would be the starch, obviously.  Or eggplant parmesan, maybe.

    Our caterer presented us with quinoa stuffed peppers, eggplant charlotte, mushroom ravioli and pasta primavera.  We chose the mushroom ravioli (we are vegetarians) but the eggplant charlotte or the quinoa stuffed peppers would work with potato and vegetable.

    I agree that enchiladas would be weird with potatoes and veggies, but I think pasta could work. Mushroom ravioli (or any vegetarian ravioli), zucchini lasagna (basically cheesy lasagna with thin strips of zucchini instead of pasta, eggplant parmesan, or simple fettucini alfredo would all be delicious.

    One of our options was vegetable streudel--puffy pastry with grilled vegetables inside.  You could put some chickpeas or lentils in for protein.  I think a curry flavoring inside would be good, although that's not what we had, maybe you could talk to the caterer about making the filling Indian-style (chickpeas, cauliflower, peas, and curry, maybe?). 

    I think ravioli would be good, too.  We had porcini mushroom purses and white sauce lasagna, and our sides were roast potatoes, green beans, and grilled veggies, but we had a buffet, so people could have a little of each starch or skip the potatoes, however they wanted.

    Ohhhh! Love the vegetable strudel idea. That's definitely unique too. 

    ETA:  The puff pastry actually gives me some other ideas like maybe a veggie pot pie or mushroom and goat cheese empanadas.

    Some casserole-type dishes would be good! there are tons of recipes for veggie casseroles online. Also was at a vegetarian couple's wedding last summer and they had a fake meat dish called citrus spareribs that was just AMAZING. The meat-eaters couldn't even tell it wasn't real meat.

    I was thinking about the streudel, or maybe even a napoleon with various veggies and a spicy tomato sauce?

    We are having a pasta primavera for our vegetarian selection but I think any of the pasta options sounds good too. And I love eggplan parmesian, and I'm not a vegetarian. I think I could live on that stuff.

    Eggplant parm sounds delicious! You could also do a big grilled portobello mushroom with some sort of sauce maybe? I'd eat either of those and I'm not a vegetarian. :3 I looked through some vegetarian recipe sites but I wasn't able to find anything much.

    Our venue has the option of a vegetable lasagna, grilled vegetable wellington, and grilled vegetable napoleon.  We're hoping that they have the second two available at the tastings because we don't know what they are (anyone know?) but are hoping they go better with our sides (one starch and one vegetable) than lasagna would.

    Thx everyone for your suggestions! I'm leaning more towards the eggplant parmesan or Wellington. Yum! PS... skantrowitz, I googled Wellington (Veggie stuffed puff pastry, looks delish!) and Napolean (Looks like a veggie sandwich w/squash as the "buns").

    I work for an elite country club and we're often faced with this problem. Are you doing a buffet? Because unfortunately if you are doing a buffet pasta might be the best option out of ease to prepare and replenish and I wouldn't be surprised if some of your vegetarian guests made it their entire meal or maybe your caterer would ditch the sides all together and come up with something entirely different for your vegetarians that would compliment their entree.

    If it is a plated dinner many caterers will make pasta the entire meal without the sides perhaps topped with a generous veggie serving. However where I work we offer these plated options (to be accompanied by side dishes) to give you an idea that it is possible for vegetarian options to be accompanied by sides.

    Roasted Vegetable Crepes - Zucchini, Summer Squash, Broccoli Florets, Kalamata Olives, & Feta Cheese Crepes, Baked in a Smoky Tomato Sauce.

    Portobello Mushroom Napoleon - A Portobello Mushroom Layered with Vine Ripened Tomatoes, Turnips, & Mozzarella Cheese Baked to Perfection. (I highly reccommend this one)

    I think stuffed peppers can be made "elegant as well" my all time favorite vegetarian food is a baked sweet potato topped with spicy black bean chili which I contemplated serving at my wedding :)

    Our meal is a buffet. Since it will only be around 10 or so people eating the vegetarian option, my caterer has told me that they'll make whatever I want. We have another tasting coming up to try the eggplan parm and wellington soon. Thank you again, everyone for your suggestions!

    I've been meeting with caterers over the past few days and we'll have a significant amount of vegetarians at our wedding so here is what we've heard suggested:

    Risotto
    Rolled and marinated eggplant stuffed with something :) 
    Grilled portabello stack (marinated portabello served with peppers, zucchini, and squash topped with marianara) 
    Mushroom and Spinach purse 
    Butternut Squash ravioli
