cake buffet

I'm having a buffet of cakes rather than one multi-tiered cake. I need to choose 13 flavours, the baker doesn't have a list as she'll do anything we'd like.

I rarely go to weddings and have cake - usually it's cupcakes, so I'm having a hard time even thinking of where to start other than:

white/chocolate/carrot

Coconut cake with a raspberry filling/icing is amazing.

Lemon with a curd filling

-- Almond or hazelnut with raspberry, cherry (preserve-style, not pie filling), apricot or another stone fruit filling
-- Some sort of spice cake (with a caramel, brown sugar, or cream cheese frosting)
-- Coffee-flavored cake with chocolate, caramel and/or whipped cream frosting/filling

-- If you have 13 flavors to play around with, I'd offer several chocolate variations, because they will be popular!  Some thoughts would be mint, coffee/mocha, raspberry or coconut filling; peanut butter, fudge or caramel frosting.  Also chocolate chip or Oreo (crushed cookies in a white or chocolate batter, frosted with chocolate or fluffy white frosting).

-- Depending on  the month of your wedding, you could add a seasonal flavor:  pumpkin, eggnog, a light cake filled with whipped cream and strawberries/peaches/seasonal fruit, strawberry lemonade (one as cake, the other as filling/frosting).

-- You might also look at your guest list and see whether you might want to offer a vegan, gluten-free or dairy-free to accomodate allergies/food preferences.

Red Velvet is super hot right now, best with cream cheese frosting.

I second the thought of a couple of different versions of the popular flavors, maybe with different fillings or frostings.  (EG.  Chocolate cake with raspberry preserve filling and cream cheese frosting is a favorite of mine.  You could also do chocolate with fudge filling and chocolate buttercream for the "death by chocolate" crowd.  Or chocolate with Bavarian or Caramel fillings).

Also, brownies.

We were asked for our choices out of options offered by the bakery. They said yellow cake is more moist because the yokes are in it, but they are not in white cake.

We asked to taste yellow cake with the following fillings:

Passion Fruit Mousse
Raspberry Mousse
Mocha Mousse
Lemon filling

They were all delicious. There were 4 of us tasting, and each of us chose a different one, LOL. We went with the Passion Fruit Mousse because it wasy my hubby's favorite and he hadn't weighed in on a lot for the wedding. I got tons of raves about it.

My favorite cake right now is lemon cake with either blueberry or raspberry filling. It's really good.

Of the flavors we had at our wedding, the chocolate caramel turtle was the one I would die for.
