Does this go together? and what is enough choice?

We planned our menu then we replanned our menu. We were excited about it and then I told a friend about it and she thought it sounded odd. We picked food that we love but we never thought enough about if they go well together.

I'll be brief and skip the hors d'ouevres (veggie options and allergies covered, everyone else eats chicken)

1st Soup (butternut squash cream soup)
2nd Caesar Salad
3rd Pasta (meat canelloni with rose sauce)
3rd Rosemary roasted potatoes, red/orange peppers, mushrooms, chicken stuffed with asiago and spinach
4th creme Brulee

Would this go well enough together? I hope so.

Second question. choice, not quantity.
Late night food, we will have pizza, fresh made waffles with ice cream and wedding cake and cookies (brownies) Is this enough? should we consider something else? I think the total amount of food is good but I was concerned the late night food wouldn't be enough.

I think your menu goes together just fine. It all sounds delicious to me. I think you will have plenty of last night food - just make sure you order enough pizza, but no additional "options" are necessary. :)

I think your late night stuff is more than enough! I've never been to a wedding with late night food, just desserts, so I think you're good to go.

That sounds good. But it looks like you'll have to swap out almost the whole menu for veggie guests? Would it be easier to make almost everything vegetarian except the chicken dish?

I have only one vegetarian guest, she is a close relative and she has approved the selections I made sure to ask her first. She can eat the first two courses because there isn't any meat. (she eats everything except actual meat and her ceasar will not have bacon)

The second course for her will be filled with cheese only instead of meat. The only change is her chicken. She will have a different main. She also eats creme brulee.

At night there are veggie pizzas so she's good there.

I am only having family and several co-workers. She is the only vegetarian and she eats eggs and dairy. It's just actual meat so I'm safe.

Thanks everyone for the help. I appreciate it.

Does she eat anchovies? There are normally anchovies in Ceasar dressing.

She is aware of the dressing. She hasn't had a problem with it since I have known her. I ran it all by her first and she is good with it. We have even made the dressing at home and so we know what's in there. But thank you for your consideration. I imagine a lot of people wouldn't think to look in the dressing for fish.
