I am thinking about doing a mashed potato bar for a 7pm wedding. Have any of you done a mashed potato bar or been to one that was well-executed? I am definitely thinking martini glasses or nice serving dishes, and cheese, green onions, bacon, etc. Then maybe chicken kabobs and salads? Any ideas?

I think that martini glasses would be a nice option to serve them in just because they are a bit easier to carry around then a bowl that may be a bit hot due to the potatoes.
Also, is this bar for appetizers or is it part of the dinner buffet?

I'm planning on having a mashed potato bar as well, and I'm stealing the savory-sweet idea with the sweet potatoes, as will as OP's martini glass idea. Thanks guys!
Haha, anyway. To add to your options to mix in with the regular potatoes, make sure garlic, chives, butter and sour cream are options as well.
