Two entree buffet question...

I was curious...

If you are doing a buffet with the choice of chicken and beef or fish...how do you know how much of each to order? Or how do they do it? Because some may only pick chicken and some may have both chicken and fish? So how do the caterers do the numbers?

It was a random question that came to mind. Thank you

    No help here, I have no clue.  I'm guessing there would be enough of each for every guest?

    You could always send the choice of entree in the invitation? That way you know you have enough of each....or they probably would just do 50/50

    Generally speaking, your caterers should be experienced to know how much of each to have on hand.

    I wouldn't send a choice on the card - you can't  absolutely guarantee that your guest will get what they want with a buffet (though they almost definitely will as long as you have a good caterer), which is what the card selection implies.

    If you're having a buffet, I would think that your caterer would know how much of each item to prepare per guest. Plus you can't expect someone to only get one meat choice at a buffet.

    Your caterer will probably cut smaller portions so that people can have all 3 if they'd like.

    Your caterer will know how much food to make based on your guest count.

    We're doing this for our reception, and our caterer said they make enough for everyone to have both, since they can't assume 50/50, even with menu response cards.  Seems a bit extreme to me, but we've got no choice in the matter and the cost isn't ridiculous.

    I am having the same style buffet for ~120 guests. So, we talked to our caterer about doing half portions of both options for roughly 130-140 people, that way people can pick one of each if they like (Or the greedy ones that pick two of each) and its till covered. Plus, it brought the price down considerably.
