Creative menu for sitdown dinner in Cancun

We're getting married in Cancun in May.  Our caterer is also a very good friend and she's doing her best to make this an amazing meal. 

I'm looking for suggestions for the dinner menu.  We're having 80 people.  The food will be prepped at the caterer's restaurant but the final bits will be done in our kitchen.  I really don't want a stuffed chicken breats no matter how creative it is.

Any ideas??

    Amen to that!

    What dishes is the region known for? I usually start with whatever is grown/raised locally and run from there... at least that's how I cook for myself whenever I travel! You could focus on a few key ingredients (like Seville oranges or dragon fruit) and highlight it in cocktails or by using it in marinades for example.
