Ice Cream Bar

Hi All!  We are serving brownies and ice cream instead of cake. I was just wondering if anyone had any fun idea on what to do with this. How to decorate it fun? We have a soft serve ice cream machine. I was wondering if there is a fun way to decorate brownies and the table set up? Also I was wondering what you all think we should use for toppings. Thanks!

    Oooh yum!

    Let's see..the toppings are endless!  Caramel, fudge, sprinkles, cherries.

    The challenge will be in ways to cut down on as much mess as possible but still make it look nice.

    What if you hired someone to run the "sundae" bar?  Maybe someone who already works at an ice cream shop?  You could pay them $15 an hour or a flat rate if it only lasts an hour of $50 or something or hire 2 people?

    I don't know these would be ideas that would be going through my head if I was wanting to do the same thing.

    It all depends on budget and how elaborate you want to go.  You could do the sundae bar and have brownies like you said or make it into an "ice cream shop" and also offer root beer floats, milkshakes etc.

    That might be kinda cool and I'll bet guests would love something like that or like an old "malt shop".

    Fruit topping are always fun (banana, cherries, strawberries with or without syrup). Sauces like chocolate, carmel, peanut butter, marshmallow, etc.  And of course sprinkles are a must, and nuts.  And whipped cream!  i'm getting hungry just thinking about it :)
    As for serving, it depends on your style.  If it's sort of formal/traditional, nice bowls and little tongs and ladels would be nice, but if it's pretty casual I doubt anyone would mind squeezing right from the bottle or shaking sprinkles form the container.

    Ice cream bar....yum. My fiance and I do catering and we are about to do a wedding where they will have an ice cream bar we are doing, if I were you just ask who is doing your food to  run the bar for you so you don't have to pay someone else. We aren't charging our bride more for this, they should help you out, it's your wedding! I'm not sure how we are going to present it, I'm thinking to use maybe a bunch of glass jars with scoops in it, but that's to 'normal', so maybe use those syrup looking glass pourers where the spout slides to open at the top, the glass will create that old fashioned look to it. You have to be careful if there will be kids there though, because with any nut or peanut allergies of any kind they need to be watched if creating their own. Look on websites how candy shops have them set up for ideas and go from there. Check this out that I found: this is cute:

    They should do it for you! I would tell them to have one of their assistants help with it, and if they start to make you pay extra for it that's ridiculous. No matter what you are paying them it's in their budget to help you out. ;) I hope they don't give you a run around. I would so want a cookie dough bar! Oh yea!

    That is a great idea, but just make sure that the soft serve machine will freeze the ice cream mix to a proper consistency. We recently attended a wedding that had a soft serve machine, and the consistency of the ice cream was really soft and almost runny, like the machine didn't freeze it all the way. 

    As for toppings, you could maybe do different types of chopped nuts, different kinds of sprinkles and non-pareills, different kinds of "morsels" (semi-sweet, milk, white, peanut butter, butterscotch), M&Ms or Reese's Pieces, etc. All the standard sauces would be good too, and I personally love a good hot fudge on top of a brownie sundae if you can swing that too! Whipped cream, marachino cherries, and fresh fruit like strawberries or blueberries would be yummy on top!
